CITRUS MARINATED PORK STEAK
= = =
INGREDIENTS
- Pork Steak (cut yourself, or ask your butcher!)
- Helberg’s All Purpose Rub
- Marinade: Orange juice, minced Garlic, pickled jalapeños, red pepper flakes
- Tools: steak flipper or tongs, knife, bone saw (If needed)

TRICK: You can do these cooks at the same time! Pork steak on top rack and chicken on the bottom!

INSTRUCTIONS
1. Cut Yourself: Watch the video! Philip shows how to cut! OR, Ask your butcher cut it up! 2 inches thick!
2. Marinate (12-24 hours): orange juice, minced garlic, pickled jalapeños, red pepper flakes, oil, beef tallow
3. remove from the marinade, Pat Dry
4. Hammer with Helberg All Purpose Rub! Let sit for a few minutes before dropping onto the grill
5. Get your grill ripping hot to 350 degrees. Put the marinade in the grill before the cook as well!
6. Grill for 1 hour, flip + rotate, 30 mins to 1 hour!
7. Pull youR steak and place onto foil, darker cooked side facing down, and build your foil boat!
8. Pull marinade off the grill, pour into the foil boat!
9. Place boat and steak On the grill and finish off the cook for 30-45 mins, OR meat is 200-205 degrees Inside
10. Let rest for 5-10 mins tops
11. Slice and enjoy!

SMOKED FRIED CHICKEN

INGREDIENTS
- Chicken halves (however many you’d like!)
- Brine: pickle juice, brown sugar, minced garlic, hot sauce, bay leaf (if you’re feeling fancy!)
- Helberg’s All Purpose Rub
- Tools: tongs, knife, stove/burner and pot for frying
INSTRUCTIONS
1. Brine your chicken for 24-48 hours
2. Hammer your chicken with Helberg’s All Purpose Rub!
3. Get that smoke ripping to 300 degrees
4. Place chicken on the grill and cook for 45 mins to 1-hour; chicken internal temp to 145-150 degrees
5. Pull chicken when ready and rest 5-10 mins!
6. Philip uses brisket tallow for his oil base; get oil to 350-375 degrees
7. Drop your chicken in and Fry for 3 minutes
8. Pull from fryer and drop your chicken Onto paper towels to soak the grease
9. Let rest for 10 minutes.
10. Enjoy!
