I ALWAYS listen to music while driving. I’m also almost always using Google Maps or Apple Maps. My CarPlay screen is perhaps a bit smaller on my car, but if you tap the two squares in the lower left corner, you can see both your driving application as well as your music application, side-by-side, so I can skip songs while still getting all my driving information on one screen.
You didn't mention that you can use Automations with Carplay. That's VERY handy. I have an automation when I start Carplay to check the temperature.
