Proof Bakery
125 W Main Street
Mesa AZ 85201
» Proof Bread is a modern throwback to a way of life that values small-scale craftsmanship, local community, and creativity. We are a small group of passionate bakers working in our garage (thanks to cottage laws) which has been converted into a micro-bakery. Everything we bake is made by hand, from the best local ingredients, with no short cuts.

One reason I live outside the United States, is because I like living in a place where I know my vegetables came out of a garden that morning and that a relative of the person that pulled them out of that garden is selling me the produce. I’m glad to see you were trying to get this sort of food supply chain to your local community. Keep up the good work.

This would be such a great opportunity for me - I have a background in food and beverage, service and culinary, and have a business background. The only thing I wouldnt like is living in Arizona. I cant stand the open oven they live in and have going from May to September. In response to your space downstairs - learning/teaching/show kitchen to host classes so learn also how to make other dishes than Tex/Mex/Southwest cuisine. You can incorporate a cultural aspect of the community by teaching other dishes that are known the world over, and yes, some SW kitchen too. Teach pastry and bread making, learn international breads - Challah, baguette, rye-bread, pita, whole grain, Indian naan bread (you need a hella hot over for this so AZ would be the place to make naan. Highlight Arizona/New Mexico wine in a cellar space down there (the north-eastern part of the basement if possible to stay naturally cool) Start a wine club too. Cheese making classes? Marinating meets. How to cook with fish. Dietary instruction classes - how to eat healthier and better. I would enjoy this but not in this market. Wish you nothing but success.

Just so pleased and amazed at your success. To think how distraught and saddened you all were and how much fear swept through your business when you had to move from your original location. Only in America, in this beautiful charitable capitalist society, does adversity lead to the taking of personal risk that most assuredly through hard work, leads to greater success and not inevitably to government dependence. It is not possible for these businesses to come to inception or flourish in a socialist society. God bless America!

That's interesting that you say "charitable" because, yeah, it was the community that really helped them several times. Maybe... a mishmash is what's needed? No one succeeds on their own.

Most businesses fail to scale because of fear. Not fear of success but the capital that is needed to take a proven winner to market. Proof has shown their passion for the product and loyal customers help build confidence essential to any small business. John lamented over complaining neighbors and the City for demanding they stop baking from home. This (as I see it) was the best thing to happen and their new found success is the PROOF.. Sometimes it takes something daunting (City of Mesa) to push out of your comfort zone and FORCE you to grow. They have risen (no pun) to the occasion and turned Artisan baking on its ear (pun intended) Congratulations for clawing your way up in the face of adversity..

I guess I'll be the one to point out that more women are finding that deep soulful and spiritual connection in raising children again, after decades of indoctrinating women to the fallacy that the workplace away from home, is more important than home and the raising of family, and that a man is naturally set up as much as a woman to raise children. There's a reason why nature is set up for men to be the workers outside the home, and women to be the nurturers and family engineers; performing the hardest and most important job on the planet- raising children. Respecting nature rids us of the drudgery of finding essential employees every time an employee pregnancy occurs. Business is not set up for maternity. It's set up for men. Unfortunately it's also not set up to survive off one income, as much as business is not set up to gain employees if the government's paying men more NOT to work. And yes of course women can do all these roles efficiently and proficiently and professionally and well, but that's not nature, unless she's creating a home based business where the children can be involved and she's not taken away from that most important position. As long as we go against nature with economies not set up to survive off one income, there will be struggles and compromises in business that have businesses suffering. I realize my comments will garner hate from the liberal minded and those intolerant of biology and nature, but we all know it's truth. Here's to many decades of great successes!

@@jpaxonreyes men and women create value through their labor. Humans are hard wired for it. However, a small influential group has found a way to siphon off the majority of the value created by that labor in the name of false authority (and create zero value themselves). You know it as taxation, regulation, and licensing. A true free market is self regulating to begin with, no authority is required. Licensing is just more taxation with a different name, both are tantamount to theft. The deeper purpose is to control all aspects of society to a specific agenda, one you would never submit to if it was stipulated transparently. One of the most successful tactics from this small group is to divide and conquer via manufacturing tension and division among different groups. See past the slave education we were given via the public schools system (whose primary objective is to legitimize false authority and install false belief systems in the population). Just sain'. Proof needs to educate themselves on Private Member Associations (PMAs). There is a war going on against the small producer, whether you are a man or a woman creating that product.
@jpaxonreyes
@jpaxonreyes 2 года назад
@@christinemose7308 - I don't drive. (It's not true, but for the sake of argument let's say I don't drive nor do I own a car.) And you're saying taxation is theft. And especially tax that goes to maintain roads that I don't use, right? But if I walk to the grocery store, I'm still using the roads because trucks brought food to the store. Roads carried the workers to the store. Roads support the other business that the grocery store workers patronage. Roads get the workers to those latter stores. And on and on. We had "true free markets" and people died because of it. We'd have ineffective police, military, energy, etc. Nothing would work to support as many people as we have in the world.

@ProofBread
@ProofBread 2 года назад
Actually, this claim is not true. We offer apprentice positions beginning at $14 an hour in an extremely low margin business which is still building its legs. Our apprentices are taught life long skills and have opportunity for advancement based on learning, with timeframes as soon as 6 months where they are then offered $16 a hour starting as a baker. Our bakers are immediately positioned on a path to lead which some have achieved in under 6 months. This position prepares our workers for a sous chef position in skill set abs pays $18/hour. From there leads are offered the ability to help make new products as apart of Proof Collective at Main St. Harvest where they can earn more. Alternatively, we have management positions in marketing, production , distribution, and Human Resources all of which continue to grow our internally promoted staff’s wages. Our philosophy is quite simple: we want to develop all of our staff from the time they come, and we do not wish to stand in the way of their forward advancement. We value promotion from within, skills based advancement, and growth for the sake of lifting wages and providing more opportunities both of which we have been doing since day 1.

Had several thoughts I wanted to share (and BTW, I'm not a candidate)... 1) what does success look like? Is it making a profit for the grocery or is it building the local farm-to-market offerings? And it can't be both... 2) You show off a lot of very interesting products, but unless you have a social media or mailing list marketing effort, you're reliant on walk-ins to discover what you have. 3) If you've seen a Trader Joes flyer, you know that they offer unique products, but their flyer features the interesting backstories for many of their products, helping to explain WHY it's so good. So, if you don't already have it (and I don't recall you ever mentioning it in all of the videos I've watched), you should consider a TJ-styled flyer (or email distribution, or big-time social media presence) that helps people understand what they will find if they visit your grocery, and just as important, WHY they should buy your products there. I feel like if you do that, then your manager will truly be able to focus on the business management and curation of local sources, and not have to focus so much on the sales... Again, you obviously want to make money...the feel-good aspect is important but has to be achieved in concert with being profitable. IMHO
