Well, we kind of do, it was the bronze age collapse and also the eruption of the super volcano in santorini. Also, they didn't just die out, they were annexed by the Mycenaean empire and were Hellenised. The descendants of the Minoans are alive and they're called Cretans. Atlantis was probably based off of a city on Santorini which was a part of the Minoan empire. The island itself was ring shaped and most of it sunk into the sea after the volcano eupted.

Fun fact: the term latin-america was coined by Napoleon III to justify France's intervention in Mexico, the idea was that due to the common Latin heritage it was France's obligation to lead Latin America instead of allowing it be influenced by the Anglos. Also France didn't invade Mexico just bevause, the country was in the middle of a civil war between Republicans and Monarchists, the republicans were backed by the US so the monarchists asked France for aid which bring us back to Napoleon III coining the term to justify the intervention.
