পিষ্টক,পৌলিক,পরমান্ন,লড্ডুক,গজক্,সরচক্রি,ক্ষীর,দধি প্রভৃতির নাম মধ্যযুগীয় বাঙলা সাহিত্যে আমরা অনেক উদাহরণ পাই। গুড়, শর্করা, মধু, দুধ,চাল,ডাল,গম, বিভিন্ন ফল ( যেমন কলা,নারিকেল ইত্যাদি) ছিল প্রধান উপকরণ।

খুবই মিষ্টি ভিডিও। আজকেও জন্মদিনে আমাদের বাড়িতে পায়েস প্রাধান্য পায়, কেক পরে কোনোদিন হয়, কিংবা হয়না। এই ২১ শতাব্দীর চরম ব্যস্ততা সত্বেও বাঙালি নিজেদের ঐতিহ্য ধরে রাখতে বদ্ধপরিকর, তবে ব্যাতিক্রম অবশ্যই থাকবে। তবে দাদা, একটা প্রশ্ন ছিল। বিভিন্ন ফলের রস/নির্যাস এর সাথে চিনি/গুর মিশিয়ে, রোদে শুকিয়ে নিয়ে মিষ্টির মত ব্যবহার করা হয়, যেমন আমসত্ত্ব। এগুলো কি "মিষ্টি" এর দল ভারী করবে? নাকি এরা আলাদা পক্ষের ?
দাদা তুমি দুধ, ছানা ইত্যাদি নিয়ে অনেক কথা বললে, ভালো লাগলো। তবে মিষ্টির যে মূল উপাদান তা হলো চিনি, সেই চিনির ব্যবহার বাঙালি কিভাবে শিখলো সেটা বিস্তারিত ভাবে বললে আরো ভালো লাগতো।
গোটা পৃথিবীর মধ্যে গুড় থেকে অকেলাসিত চিনির আবিষ্কার এবং ব্যবহার প্রথম ভারতবর্ষের মাটিতেই হয়েছিল...কেলাসিত চিনি বা কলে তৈরী চিনি যা পাশ্চাত্যের তা শরীরের পক্ষে ক্ষতিকারক কিন্তু অকেলাসিত চিনি এবং গুড় শরীরের পক্ষে উপকারী...কাশীতে এখনও অকেলাসিত চিনি তৈরী হয়...আগে পানিহাটিতে হত...এখন হয় না...গোটা পৃথিবীকে মশলা এবং চিনি খেতে শিখিয়েছে ভারতবর্ষ🙏
I am a Bangladeshi from Dhaka. We have been making ponir in Dhaka since 17th century, and I was curious to find out why there was no ponir (fermented cheese, not chaanna) in all of India, other than Dhaka. The mysetery got solved after I found out that the ponir we make in Dhaka is made using beef rennet. By the way what is coincidental is that the production of ponir in Dhaka is around the same time Mughal ruler Jahangir took interest into Dhaka and even renamed it as Jahangirnagar. So, I believe it was Jahangir who introduced ponir making in Dhaka. And I suspet the chaanna might have gotten introduced by Mughals too, as an alternative to ponir, in rest of india, which might have happened during the rule of Akabar.
@@ranajit2355 yes it is, because that’s how Indian paneer is made, pressing chaanna. But I believe it was first introduced in Odisha and Bengal either by Mughals or Europeans. It is more believable that Europeans introduced it because it is used a lot in Southern Europe where it is called Ricotta cheese. The Europeans also promoted potatoes in Bengal, hence we have potatoes in our biryani.
Dhaka has more things introduced by the Moghuls that are unknown on the Indic side. Because they used the animal rennet in unpasteurized milk, it produced a different kind of curds. It has yet to be explored. Btw, ricotta and paneer are a bit different. Ricotta is made from the remainder of paneer. Rich ricotta is delicious on its own
