Holi Special: Thandai White Chocolate Mousse (HINDI)

On Episode #7 of #HaayeGarmi I am celebrating the festival of Holi with this super delicious Thandai White Chocolate Mousse. The recipe shows you how to make your own Thandai Paste from scratch.
You Will Need:
Thandai Paste:
1/4 cup Almonds, soaked and peeled
1/4 cup Pistachios, soaked
1/4 cup Cashews, soaked
1 tbsp Fennel seeds
2 tsps Cardamom Powder
1/2 tsp Cinnamon Powder
2 tbsps Poppy Seeds
8 Whole Black Peppercorns
Pinch of Saffron
Mousse:
-1/2 cup Vegan White Chocolate
-2 tbsps Thandai Paste
-200ml Coconut Cream
-2 tbsps Jaggery Powder
-Garnish with Almond Slivers & Dried Rose Petals
Method:
1) Soak 1/4 cup Almonds for 8 hours or overnight and peel them. Soak 1/4 cup Pistachios overnight. Soak 1/4 cup Cashews for 2 hours.
2) In a blender add your soaked nuts, fennel seeds, cardamom powder, cinnamon powder, poppy seeds, black peppercorns and a pinch of saffron to make your Thandai Paste.
3) You will need to open the blender a few times and scrape the mixture down using a spoon or a spatula till you develop a paste like consistency.
4) In a double boiler, add 1/2 cup Vegan White Chocolate to the bowl on top only once your water below comes to a boiling consistency.
5) Melt the chocolate and then add 2 tbsps of the Thandai Paste, 200ml of Coconut Cream and 2tbsps of Jaggery Powder and mix well.
6) Take it off the heat and strain the mixture and then pour into moulds of choice to set.
7) Leave in the fridge for 6-8 hours to set or overnight. Garnish with Almond Slivers and Dried Rose Petals to serve!
