So, never heard either name, but upon seeing their description I realised I’ve done that a bunch of times as a kid, finding the entire concept of tossing ice cream in the oven without it smelting a special kind of magic. Been years since I did it last, now I know what to cook next week :)

@@ericmyrs I'm guessing it comes from same root as 'baked Alaska', the peaks look like snowy peaks. I don't think they do those in Alaska either, it's a French dish.

How about cooking from 'De re coquinaria' an ancient Roman cookbook which is available translated on Project Gutenberg? It's the earliest surviving collection of recipes from Europe.

Mike is easily the most advanced "normal", like at the end how James was giving him nuanced tips like "don't overwhip the whites before you add the sugar" - meanwhile Jaime is still stuck on "Risotto has to be stirred"

I would say Mike is the best normal in terms of knowledge and understanding, Jamie is the best normal in terms of cooking and control and Barry is the normal with the best knife technique and leaving every hob on the stove on of course 😂 they all have their own individual specialties, if you could combine all 3 of their skills into one, you would have another chef in the studio 😂

Could not agree more (though, I would agree with @Spiritual Alchemy& kundalini, all the Normals are much better than they give themselves credit for. They need to trust in their skills more, because they definitely have skills. I've said this before, and I'll keep repeating it, were I still running my own restaurant (I'm a retired chef), I would hire any of the guys in a heartbeat, and know that they would do a bangup job!

This was a (expectedly) hilarious but (unexpectedly) endearing video! Loved the chefs softly guiding Mike to the answers in a way that encouraged him and reminded him that he does indeed know these skills and techniques. That's the way I teach my own students, and I got the same excitement and happiness whenever Mike realized he was actually doing each step correctly. Fantastic job, Mike!

I loved the ending where James, Jamie and Ebbers were complementing and applauding Mike for his performance because he isn’t good at accepting appraisal so deflected everything away, but he’s really hard on himself and puts himself down frequently and won’t commend his own efforts so the team around him need to do more to raise him up from the hole he digs himself into

Tbh Mike puts himself down so much that it's getting frustrating. He needs to keep a handle on his esteem issues if that's the problem while on camera because it's incredibly offputting.

This book is unnecessarily complicated so Mike producing a remarkable end result was amazing! He should be justifiably proud of himself because he didn’t require much input from the side and most which was given only steered him towards an answer he was close to attaining anyway! Check out "The Art of Cookery Made Plain and Easy" by Hannah Glasse from 1747 - is was a bestseller in its day and is an important source for historians of British food. There is a bizarre recipe for "currey the Indian way" in it, the first british curry recipe we know of.

@@tythranduilion2410 Ann also does a short bio of Hannah Glasse in one of the vids, it's such a sad story. Her books were best sellers in their time but the system was against her as a single mum (widowed) so she died penniless... While the books sold and sold and sold. You prob know all that already, I just find it so sad and so unfair.

@@XingAoShen My thought was that it wasn't a modern sweet ice cream, but more of an older style. back before modern refridgeration, there used to be WAY more types of ice cream. I've even heard they had fish ice cream.

I actually rather like the trend of X-themed cookbooks. It seems often they have solid reliable recipes with a bit of narrative flavor, and having a bit of fun and magic (as it were) in the kitchen can get people (especially kids) cooking more.

I think you guys should do something from “The Nordic Baking Book” or “The Nordic Cookbook” by Chef Magnus Nilsson. There are some very interesting recipes in that book that I’d love to see you all attempt.

Definitely! The peaks are more forgiving than the stripes, and you get more variation in caramelization/ flavor.

If they're feeling _really_ adventurous, they could try Marcus Gavius Apicius: De Re Coquinaria. I believe it's one of the first known cookbooks, originally compiled in the 1st century AD. It may be hard to find a pure translated copy, without other things added to it, like additional history lessons, but that may add to the fun.

This is gonna be **gooood**. EDIT: More please! More 1918! Maybe each chef draws a random page number and recipe and then all come together to make a combined meal with each part? jacko2131 yes to this and MissMoon111's suggestion! I'd love to see it be a switch. First the normals all sit around arguing and trying to instruct the chefs without being able to quote the book. Then when its done the chiefs switch places with the normals and talk them through what they should do to make that recipe. Edit: i say arguing cause well, it seems like what would happen with them trying to decipher the recipe and figuring out how to best communicate it to the chefs.

MissMoon111, definitely agree on instructing the chefs. They aren’t allowed to fix wrong instructions so when the normals mess up, they just panic and stress out while knowing they’re doing the wrong thing.

Ahhhh...James, me lad, your searing snark has been thoroughly missed. It's SO GOOD to have you back!! 8:28 Ben's reaction and mine were identical. My inner chef was cringe/screaming at Mike - "NO!! Dont separate eggs OVER THE WHISKING BOWL!!!!!" Seriously, I almost had an anxiety attack watching that. Final verdict: That looks AMAZING! Mike, so proud of you bro! Baked Alaska is one of those fiddly, classic deserts that if you go a little bit wrong, it all goes to hell in a handbasket. Well done!!

gotta say, i'm very impressed with mike. it's not often we see him on his own. i loved how the chef's were giving him nudges in the right direction, encouraging him to figure things out/use what he knows. i'd enjoy seeing more of that kind of teaching from them
