I regularly cook hokkien mee at home without caring about budget but just about ultimate taste. I also cook without pork as I have a Muslim helper at home. Use fish head and fish bones to add another dimension to the broth. Air fry or bake chicken skin to add as crackling at the end. Be generous with garlic and spring onions. With the smaller wok size and fire, I find cooking for 4 adults is optimal. Anything more I cannot control the overall taste, wok hei, firmness of noodles etc. Slowly cook the noodles with the broth, at least 20 minutes before you add any other ingredients. Use a ladle and a spatula to toss the noodles regularly. With enough practice the home cooked version will taste better than even the most famous ones at hawker centre.

let me explain a little about this. In fact, it's not just pork that's not allowed, but any kitchen utensils that come into contact with pork, they actually can't eat it. Even if you cook halal food, they can't eat it. except in cases of necessity and emergency, they will eat it, even though they know it's not 100% halal

I loved this video, thanks so much for sharing, especially as an “expat” and fan of the Old Airport Rd hawker. Actually one of my fave hawkers there is Emina Mi (Vietnamese food) 🤤🤤

The tester talks about the freshness of the prawns & sotong, and texture of the noodle at the end of the video but fails to talk about the flavour of the noodle which is what Hokkien mee is all about. It’s the flavourful prawn stock infused into the noodle that makes it or breaks it. Anyway this is a well made video, at least I watched to the end.👍✌️😆

Chef Henry, work on your wok technique. Using brute strength and tossing it like a pan is wrong! Slamming it against the base with each toss is wrong too. I don’t know but maybe your left wrist was injured during the filming, and this isn’t how you usually toss the wok. 😢

Don't ever abuse the term weok hey. Singapore hokkien mee is not considered as fried, so it has nothing to do with wok hey.
