INGREDIENTS (makes 30 biscotti):
▪️ 285g all-purpose flour
▪️ 6g baking powder
▪️ 4g salt
▪️ 3 eggs
▪️ 185g sugar
▪️ 150g whole almonds
▪️ 100g dried cranberries
▪️ 1 tsp orange extract

INSTRUCTIONS:
1. First sift together flour and baking powder. Add salt and mix it well in a bowl.
2. Put the eggs, sugar and the extract of your choice. Whip the eggs until light in color.
3. Whip the eggs well until light in color. It should take about 4-5 minutes.
4. Reduce the speed of you mixer to low and mix in the dry ingredients until incorporated. Do not overmix.
5. Add the almonds - you can use either peeled or unpeeled, as you wish. And dried cranberries. Blend it in with a spatula until evenly combined.
6. Put the dough on the lightly floured work surface. Sprinkle your palms with flour and form the dough into a log. Place it on the sheet pan covered with a parchment paper.
7. Bake at 300ºF/150ºC about 1 hour until it gets light golden brown and firm.
8. Remove the pan from the oven and let it cool for about 10 minutes. Using a sharp bread knife, cut the log into slices 1cm thick. Don't wait more than 10 minutes, otherwise the log will become too firm.
9. Lay the slices on the sheet pan and bake in the oven with reduced heat 275ºF/135ºC. It should not take more than 10 minutes. But you can do it longer to get more crispy biscotti.
10. You can store your biscotti in a tightly closed jar.
