The finger test shows the jam has gelled - as it moves, if it forms a ‘crinkle’ as this shows in the video and feels gel like, the jam has reached the setting point. The jam wouldn’t move forward in this way if it hadn’t set yet. We have more details on testing in the full recipe 😊
