After years of gathering best recipes for refried beans, fried potatoes, breakfast tacos and all things related (I live in Texas where breakfast tacos rule!) all I really had to do was wait for today's video from G Mama to learn best recipes. Only thing I do differently is add a handful of diced onion to potatoes, like you say, make it my own. Delicious! Thanks.

I love this video. I keep watching it over and over! A tip, though, that cafes use (found out when I worked in one) is that you can get a better crispy, brown and fluffy potato if you pre-boil them. They called them “Home fries”. The way they did it was to wash, then place whole russet potatoes in a large pot with water and a little salt. Make sure the potatoes are about the same size so they cook evenly. Boil them until you can easily pierce them (similar to boiling mashed potatoes) about an hour or so, as they’re bigger when they’re whole. You don’t have to worry about the water being at a boil as much with these because they still have their skins on so they won’t get water logged as easily. When they’re done, let them cool to a point that you can safely handle them. Use a butter knife and easily peel the skins off. You want them to be warm to make peeling the skins easier. You can make a big batch this way, chop the cooked potatoes up, throw them in the pan with some oil on medium and they’ll crisp up nicely while also keeping their fluffiness. After they’re boiled they can also be chopped and put in a large Tupperware in the fridge for later use. Doing it this way saves you major time trying to ensure the potatoes have cooked through when you’re making your breakfast taco filling ^.^ Ty for your awesome food videos. I cook mine in the microwave then let them cool and chop them up and put them in the pan till they're crisp. so fluffy on the inside and crispy on the outside
the flour tortilla right off the comal..that alone brought sooo many memories..my momma used to make homemade tortillas when we were little...mom would put a lil butter on it. and we would have our chocolate milk ready.
I fist thought the bowl she was using to make the flour tortillas was a colander...lol...had to put on my glasses... I love all of her recipes. Shes makes the steps so easy and do-able.....

I've never seen this made with refried beans before. I always sauteed onions along with the potatoes. I am going to have to try this with a couple of more eggs too. lol. It looks very good. Breakfast of champions. I love them before work.
I like that you called it Breakfast for Champions. In South Texas, breakfast tacos are everything. The gas station Stripes sells a taco pretty much exactly like the one in this video. It has chorizo, papa, and egg..WITH refried beans and cheese. They advertise it as El Campeon, which literally translates to The Champion. Breakfast for Champions babyyyy

Thank you SO much! DH loves Chorizo breakfast tacos, but I won't make them because store bought has so much bad fat and DH has had 2 heart attacks. And because store bought always seems to have Annato, which triggers my Crohns. Your awesome turkey Chorizo solves both, YUM!

I just made this recipe and instead of chorizo, I used pork sausage. It was really good. My husband said it would be even better with some pico de gallo. Thank you for sharing this tasty recipe.
When I discovered my roommate who is off Mexican Heritage make her refried beans like this, I have never purchased a can of refried beans again. Absolutely delicious!
Try scrambled eggs and those smushed beans on top inside a tortilla. Or chopped pork chops and the beans in a tortilla. Also, migas with some chopped eckridge sausage in them. Bomb! Been making these types and combinations of breakfast tacos for years. They never let my family down. Great for the kids before they head off to school.
Oh my gosh! There is nothing better in this world than a homemade tortilla hot off the stove. Mexican food is my absolute favorite. If I lived with you I would weigh at least 400 lbs lol. ❤️

Love your channel! Looks delicious. I prefer to scramble my eggs in the same pan but remove the other ingredients first. This way you get scrambled egg chunks in a bite instead of egg coated potatoes and sausage.
Wow....you just made my favorite breakfast ever. I do mine the same way except I buy my tortillas already made from my local grocery store that makes them homemade. The only thing missing is a good cup of coffee to top it off. I bet your house smells amazing after that breakfast.
