I miss Chicago deep dish pizza. When I lived there I would have it about once a month. I loved Giordan's....I liked them all....but that was the first one that I went to and that is the one I like. 6:18 It looks nice.....Oh gosh you brought me back so many memories... Thanks Alexis! In college me and a buddy would always split a whole large Giordano's on half-price-Monday. I don't know how I didn't have a heard attack in my 20's from all that cheese. So good...

Great grill will give this a go over the weekend. The grandkids are over and will let them judge me. Terrible weather out doors in Sydney Australia currently so their weekend in the pool may not eventuate this recipe could just save me.

I think sprinkling corn meal also helps with avoiding sticking of the bottom, right? It's interesting you first layer the cheese and the ingredients and lastly the sauce, is there a specific reason for that? I will try this next weekend, thanks for the pizza dough in video, looks really good!
To be honest, I don't know why Chicago deep dish is made "upside down" like this. Maybe it's so the dough doesn't get soggy from the sauce? Definitely go with the cornmeal crust. It was a great recipe and a big part of what makes the pizza "Chicago-style"

@@ChicagoGriller try direct heat for the first 10 or 15 and then indirect heat for the rest of the time 30 to 45 min. your video demonstrated to me that it can be made with direct heat the whole time. probably a testament to cast iron helping even the heat out. again good video.
I will be making the Pizza at a much higher temperature ! Not sure how hot the Q1200 gets Weber says all their gas grills are designed to get between 500 to 550° Fahrenhrit . My little '92 Weber Hot Shot gas grill gets between 600° to 700° Fahrenheit , I know the pizza places are at least this hot and even higher . I will try the smoke pack you taught us know to make to get that wood fire taste . Thanks , Jerry !
I love deep dish pizza. My first experience was at Pizzaria Due. I've had Uno, Malnatis, Giordanos, and a couple of others that are considered 'classic'. Each has their own twist, except of course Pizzaria Uno and Due use the same method. That is the one I prefer out of all Chicago deep dish. The ones where they put another crust on top seem really wrong to me. I understand that they are trying to 'make their own', but sometimes, the original hits the mark so well, it doesn't need changes. As Jerry would say - 'Anyways...' I'm a Pizzaria Uno fan, and yes, I know where Lou Malnati began his career...

I’m not familiar with the Holland grills. I wonder if it just doesn’t heat up as fast or as easily. You won’t have any problems with heating or sear, especially with the Q1200. Check out the burger comparison video I did and you will see my neighbor’s 1200 burned faster and hotter faster than the 2200. Good luck with your decision and thanks for watching!
