Homemade Coconut Oil Recipe - How to Make Virgin Unrefined Oil

Ingredients:
3 mature, brown coconuts
Tools
Cleaver/screwdriver/hammer
Food processor or blender
Unbleached cheesecloth/fine mesh strainer
Instructions:
Pop a hole into 2-3 of the eyes {depressed circles on one top of the coconut} and drain out the water. 1 of the eyes will be softer and easier to work with.
Crack open the coconuts {as demonstrated in the video} and obtain all the meat. You can do this by either wedging something blunt in between the shell and meat and carefully wiggling it out or by directly scraping it out.
In batches, blend the meat with clean water {using a 1:1 ratio}. You want to finely pulverize the meat until it has a creamy, almost cohesive consistency.
Pour into a large bowl and use your hands to squeeze the pulpy meat for 20-30 minutes. This step is just as important as the next strain through cheesecloth/strainer. As a bonus step, you can leave this mixture to sit for a few hours.
Collect all the pulp {again in batches} in a cheesecloth or fine mesh strainer and squeeze {with all your might!}. The goal is to leave behind bone dry flakes and extract all the liquid into a bowl. You can press it out twice, if need be. What you essentially have here is coconut milk.
Cover this bowl and allow it to sit, undisturbed in a dark place for 1-2 days {1 if you're in a hot environment. If it's too hot, it will become sour}. I kept mine in the microwave for 1.5 days.
Afterwards, you can chill it to faster solidify the layers. The bottom will be murky water, the middle layer will be the coconut oil followed by a top layer of cream or curd.
Skim off the top layer of curd/cream {this can be used for coconut cheese}.
Spoon out the floating oil and at this point you can either filter the oil through a clean cheesecloth then allow extra moisture to evaporate by covering with a bit of plastic with a hole for air to escape or use right away.

This whole process was fascinating to me, Angela! I know that coconuts have a lot of oil and that's what we use to make our coconut rice but I had no idea that would happen if you just let the milk sit there for a while. And I vote yes for a house tour! Woohoo!

This video would've been helpful yesterday afternoon. I opened a coconut with a saw and 1/2" chisel. It was hard even though it was pre-cut with a groove in it. How did you get the brown shell off? Not the left over bits with a peeler but the actual bulk of the brown shell.

GodlessManitoban J wedged a screwdriver in between the shell and meat but pretty much after he cracked them open for me, I was able to wiggle them out of its casing pretty easily on my own.

Tosanbami Abbey Hello, Tosanbami! I keep mine at room temperature but it's always about 73 degrees in my house. If you don't mind it perpetually in a liquid state then it's fine out but you can also keep it chilled. Hi can I use store bought unsweetened coconut flakes instead? Because the supermarket I go to does not sell fresh coconuts. If I want fresh coconuts I have to follow my maid to the fruit stall next month

KELSEY NGKOO Hi, Kelsey. The cold processed method is important since it maintains the integrity of the oil and retains more of its health benefits. The heat from the blade of a, say food processor will impact your final product. That being said, you can begin with a sack of organic, unsweetened coconut flakes and run them through a food processor and grind it much like homemade peanut butter until it releases its oils or press them through a juicer.

KELSEY NGKOO Natural coconut oil without stabilizers will fluctuate with room temperature. When it's cooler it will solidify while when it's warm, it will become liquid. For many purposes, I aim to avoid applying heat to my coconut oil.

+Empire Reality Shows Hello! I've had mine for 5 months now with no signs of going rancid {though, we keep it pretty cool in the house too}. If you're worried about spoilage since it's homemade, you can keep it in the fridge.

+TheSquishyMonster So I tried my hands on this using fermentation method cos I needed a cold pressed coconut oil with no heat of any sort. So I fermented my coconut milk for exactly 24hrs, unfortunately, I got just 2 layers(just the curd and water). Please what do I do? Cos I expected the oil to form a separate layer too. Please advice!

I also like them skewered as mini caprese bites and other times, I like to roast them, drizzled with balsamic and spread onto crostini with goat cheese--yum!!
