Colby cheese is one of our family favorites. This is a perfect cheese to start on when first getting into aged cheese. This is a step by step tutorial on how to make your own homemade, goat milk, Colby cheese in your own home. Making a hard cheese for the first time can be intimidating but the rewards are worth the hard work!
Welcome to the Blue Cactus Dairy Goat Ranch! We breed show quality Nigerian Dwarf Goats! We currently have a herd of 17 does and 4 bucks. Our herd is rotationally grazed on our 10 1/2 acre homestead in Arizona. We also raise chickens for eggs and meat and keep a large garden year round!

Crystal: Great presentation. Curd Cutter is good tool to cut it horizontally. I make cheese for myself and use same process that you demonstrated in this video. I would like to have that press. Thank you for sharing. P.S.: I use a larger pot with little water, place inside the pot for the milk and heat it indirectly.

Very detailed process. If I could get the 3 gallons of goat’s milk I would like to try this. I suppose you could manually press the mass of curds. Very cool process- nice block of Colby- yes you need at least 3 gallons to start!

Good job! Wish I could taste it. I dislike goat cheese, but we just came back from Holland in April trip and went to a Windmill that ground grains and made all sorts of cheese. Guess which one was the best! GOAT cheese! It was a naturally sweet tasting and not that american wild taste. Their wheels were HUGE and around $35.00 but the return trip, they take your smoked sausages and cheese!!! at the airport. So they claim they dispose of it....uh hem, in the break room. Fun watching you!!

Oh my gosh, you really did make it look easy! So much easier than when I have read it in a book! Wish I still had goats, only sheep now and we don’t milk them. Yes! If you can get some goat milk then try it!! There are a lot of ideas for homemade presses if you Google it. Look it up and see what you can find. It's much cheaper than purchasing one if you are just wanting to try it out. My press was about $120 and well worth it! It will last forever :)

I know this is an older video, but have you tried potato mashers/pastry cutters (these pastry cutters may not be long enough but with your handy husband perhaps he could add something on the handle to lengthen it)? I don't make cheese, but I was watching you and thought maybe one of these would help save you some time. I know I usually never use the exact tool someone/thing suggests and look for the best option I have in my drawers. lol Wishing you the best and you're making me want some cheese! lol :) (Saw some mashers and cutters on Amazon that could possibly help you.) 💖🧀

@@BlueCactusDairyGoats it was super yummy. I brined it to get it just a little salty. Left it about an hour in the brine. Next time I'll cut the curds a little larger, like 1 inch. My family loved it.

Everything expires!! Haha! However they dont have an expiration date on them. I buy the kits and they are linked in the description of the video. Next year I will buy in bulk because I plan on make mucho hard cheeses!! Lol Not very expensive in the kits and a little goes a long way!

Crystal I’m curious about what you do with the whey? Does this make sweet whey or acid whey? I know certain cheese making such as cheddar makes sweet whey and some like chèvre makes acid whey.

Great question! There are so many things you can do with whey! If you dont use anything acidic, like citrus or vinegar, it will be a sweet whey. Tou can use for cooking, make Ricotta, feed to garden plants, dogs and chickens. Ricotta is best with a sweet whey that doesnt use vinegar or citrus.

I googled ‘cracked home made’ cracked crafted cheese ::If your cheese is cracking, the humidity in the air is probably too low. In the winter, humidity can be especially low. Cracks in the cheese surface, is a common problem during the winter. To prevent this, the cheese will need to be placed in a more humid environment, 65-75% humidity. From Google

Awesome!! Yes, most recipes dont call for the calcium chloride for raw milk but this recipe did so that is what I went by. Probably would have worked out without but was a raw recipe calling for it. Turned out good the other times I made this recipe so just go with it :). Hope your cheese turns out! How long are you going to age it?
