Pastor Jim and his wife, Carol, share a homemade Communion bread recipe given by a home-bound woman who once served as Communion Steward of her church. As alternative to store bought wafers or cut white bread, these have the hint of pie crust that melt in our mouth. May you experience as those two disciples who met the risen Christ on the Emmaus Road - "Then they began to describe what had happened on the road and how he was made known to them in the breaking of the bread" (Luke 24).
By request, here is the Communion Wafer Recipe:
2 cups of flour
1 cup butter
1 tablespoon sugar
Crumble all of the above together using a fork or dough cutter.
Add 1/2 cup heavy whipping cream (don't whip it)
Roll out to thickness desired, for example 1/4 inch, and cut into squares using a pizza cutter before baking it.
Spread out on baking sheet and bake at 350' for 20 - 21 minutes.
Makes 1 large cookie tray full. (You can cut recipe in half for smaller amount).
