Looks a lot better then the way I make mine. You should try selling this I easily sell rainbow for 10 bucks per 5 oz which is a lot of profit for a fish averaging 2 lbs
A guy at work used to take little bluegill that most people wouldn't keep, fillet them out and make jerky. When he first talked about it, I thought, Ewww. But I tried it and it was surprisingly good. I don't know what recipe he used. You could tell it was fish but it was quite mild and not overly salty or spicy.
When I make deer jerky, I usually cut it up with scissors while still warm. If it gets hard, I can soften a piece in my cheek. Been able to keep my teeth.
