My homemade Marinara Sauce: • How To Make A Vegetari...
This recipe is gluten free and easy to make.
Fried Polenta with marinara sauce recipe
Ingredients:
1 cup polenta
4 cups water
1 tsp. Salt
¼ cup parmesan cheese, grated
¼ cup gruyere cheese, grated
2Tbsp. Butter
1 quart Marinara sauce, my recipe
1 lb. ground turkey
salt to taste
Directions:
Fry the ground turkey in a large frying pan over medium high heat. Break the meat up with a spatula while it cooks. Add a teaspoon of salt and stir it in.
When the turkey is no longer pink, drain off any excess grease and add the turkey to your marinara sauce. You want your sauce to be thoroughly heated through.
Take a 9 x 13 baking dish and pour 1 tsp. of olive oil in it and spread it around with your fingers or a piece of wax paper.
In a stockpot, add the water and salt. Heat the water to a boil over high heat. Once the water boils, begin pouring the polenta in with a constant slow stream while whisking. Once the polenta comes back to a boil (remember, you are whisking constantly) lower the heat to low and cook for 4 to 5 minutes whisking constantly.
Then cover the pan and cook the polenta for 18 to 20 minutes on low heat. Remember to stir the polenta with a wooden spoon every 4 to 5 minutes to keep the polenta from sticking to the bottom of the pan.
After 20 minutes, turn the heat off and stir in the butter. Then add the grated cheeses and stir until the polenta is smooth and creamy.
Put the lid back on and let it sit for 5 minutes with no heat.
After 5 minutes, pour the polenta into the prepared 9 x 13 baking dish. Using a spatula, spread the polenta out into an even layer.
Place the dish in the refrigerator for a minimum of 2 hours to overnight. You want the polenta to be cold enough to cut into shapes.
Then cut the polenta into desired shapes. I cut it into squares. Place a frying pan over medium heat and add 1 Tbsp butter and 1 tsp. Olive oil. Once hot, add slices of polenta and cook for between 5 and 7 minutes. Once it is a crispy golden brown, turn the pieces over and continue to cook until golden brown.
Remove to a paper towel covered plate to absorb excess oil.
Immediately serve with a generous amount of hot marinara sauce and a garnish of parmesan cheese.

My mother used to make "cornmeal mush" when we were growing up. She put it in a loaf pan and the next morning she would slice it like bread, then fry it up and we would put butter and maple syrup on it and eat it like pancakes. One of my best memories in my mother's kitchen.

Very good additives to the polenta. When I was a kid we called this fried mush. Anything can be added to it or topped on it. Two dried cobs of corn could feed a family of 4 if you ground it yourself, how cheap is that :) This food is so simple people think it's plain tasting......no no no, it's superb. Think blueberry and vanilla mush, with syrup and eggs..........think sausage or bacon mush, with syrup and eggs lol.......think garlic, tarragon and onion mush with stroganoff gravy.......sky's the limit. Thanks for the vid Robin...took me back to old times.

I like to make polenta, as an alternative to pasta, in the summer...When fresh veggies are all around I make my Garden Sauce (marinara with whatever veggies are on hand) and serve it on Polenta squares (even soft polenta in a bowl, is good!).....I grew up calling this Cornmeal Mush....eaten Soft, or Chilled-and-Fried...both ways are so good...Thank you for this video, Robin...it made me smile..

if you watch, just before she's about to put it (hot polenta) in the fridge, she didn't inform you to let it cool all the way down. hence, don't put hot food directly in the fridge

Robin I've been searching for a Marinara sauce like yours for years. I'm stoked to find your father in laws recipe and with crispy polenta too... to cool! Now all I need is for you to hook me up with a super thick and hearty old school meaty pasta sauce.. you know the one that tastes like it's been on the back of the stove since early that morning and gramma has been adding bits and pieces of love to it all day long? She only makes it for the most special of occasions...

Hi Brady, I've got a few variations for you to try. Very yummy. You can take my marinara sauce recipe with all the herbs, add some pork sausages and maybe some ground beef and let it simmer for a couple of hours and you will have some amazing sauce. Let me know which one you are going to try and how it turns out!

Rockin Robin Cooks thanks Robin! I will do that. I'm a real fiend for authentic Italian and Mexican food. Greek and Korean are a very close second. I suppose I am great BBQer according to my wife, kids and friends, however by the time I get done with a 15-18 hr cook I want nothing to do with eating any of it.

Hi! ☺ I'm enjoying your Polenta video. Tyfs!! I make Polenta, a Grammas recipe, & we slice & fry it. It IS DELISH!! 😛😛 QUESTION: You mentioned that you cook it for 20 minutes??? I use fine grain cornmeal... Should I be using coarse? I, literally, stand @ the stove from start to finish & mine is done in less than 10 minutes (constant stirring), then poured in bread loaf pan to set before slicing & frying. You called you sauce marinara but you had it turkey mince. Marinara is usually a seafood sauce. Was your sauce a primavera sauce? Which is a vegetarian sauce! 😊

Well I always use self-made fond/broth, mostly poultry, instead of water for taste. Here I would put fried capers, onions etc . on top; whipped feta cream and roasted pine nuts. Take care

My polenta never gets crispy. It just soaks up all the oil and butter and sticks to the bottom of the pan and makes a mess to get up. What am I doing wrong? It doesn't look like yours at all!

My understanding is that polenta is made from yellow corn and grits are made from white corn. The main difference is texture. Polenta is courser.

The polenta looks a lot like grits. but Just a yellow orange color not white like grits. Is it the same?

Hi Robert, polenta and grits are similar. Polenta is made from ground yellow corn while grits are made from white corn. The consistency is a little different with polenta being a bit more course than grits.

Hi Brian, yes they are very similar. Polenta is made from ground yellow corn and grits are made from white corn. Grits are definitely a southern cuisine. Polenta is a staple in Italian cuisine. Thanks for watching!

I really only came here for the crispy polenta recipe. Except, that’s not a good recipe for crispy polenta. The water to corn ratio should be half. Like 2 -2.5 cups of water to one cup polenta. Disliked video because it wasted my time

@sory4:Thanks for your contribution. I first followed the 4:1 ratio & no bueno....too runny when heated. Then 3:1 on the 2nd batch. Better but still didn't hold up all that well in the frying pan. Thinking about removing the butter & cheese and using your ratio. What I really want to do is GRILL the pieces on my BBQ but until I have a "firm" recipe I don't dare rush THAT mess!. I've actually been checking to see if anyone ever adds flour to the recipe.....or perhaps just making a non-sweet cornbread recipe.
