Homemade Hawaiian Chocolate Haupia Pie 

The Hawaiian word "Haupia" means coconut pudding. Filled with rich chocolaty and coconut cream goodness topped with some silky and smooth whipped cream! The custard is made from coconut milk with cornstarch as the thickening agent. The chocolate is from melted Chocolate chips. I recommend using good-quality chips.
• Pate Brisee Pie Crust, blind baked and cooled down (I used my homemade Pate Brisee Pie Crust. Please note that the recipe is for 2 pie crusts. However, I preferred thicker pie crust so I only made 1 flaky, and very buttery pie crust)
CUSTARD CREAM
• ¼ cup cornstarch or corn flour
• ¾ cup sugar
• ½ tsp salt (I used Kosher salt)
• 1 ¼ cups whole milk
• 1 can (14 fl oz) coconut milk (or 1 ½ cups)
• 4 oz semi-sweet chocolate chips (you may also use all semi-sweet chocolate chips)
• 4 oz bittersweet chocolate chips
STABILIZED WHIPPED CREAM
• 2 cups heavy cream
• 2 tbsp powdered sugar
• 1 tsp coconut rum (optional)
• 1 tsp vanilla extract
GELATIN MIXTURE
• 1 packet (.25 oz) unflavored gelatin powder
• 2 tbsp drinking water, room temperature
SPRINKLES (Optional)
• 1 cup coconut flakes, toasted
