I think he means 16g Salt. But i suggest max. 8g. Not more the 2% of the flour.

This is the best ramen recipe I've tried so far :) I had tried once with the egg and it became a bit sticky and it crumbs off when it boils, but after I tried with your recipe (8g of salt btw) it came out really impressive.Springy, chewy and silky, just like a restaurant quality. Also my best choice for flour is All-Purpose flour. Dont ever go with "OO" flour which result in a very sticky, moist dough, which is not recommended. Again , thank you:)

@@vinaytanwar7840 Yes i do recommend to bake the baking soda in oven for 220 Degrees Celsius for 30 minutes because it will help to make the pasta more springy

Can you dry the noodles? I do it to home made egg noodles, same pasta recipe, 1 egg to 100 g all purpose flour. I do add some topioca starch for the bite. That dries well after noodle making. Doesn’t ramen have eggs as a content?

Pasta maker attached to a mixer is NOT shop equipment 😂 You need to see an actual ramen machine they use in shops, it weighs 800kg, and that’s a modern one (very compact). The traditional one is many times heavier. What they use here is no different from $30 hand-cranked pasta maker, just the lazier way.

What exactly is bread flour? Usual noodles is made with All purpose flour (full refined). Is this one less refined?

Yes, knead it with the mixer on low though, or you can burn your kitchenaid out because its a tough dough

No, but you want a high protein flower. Thats what gives it the bite ramen noodles have.

I just made these with a rolling pin, and it took a lot of rolling and pressure to get what looked like acceptable thickness, but after boiling, they were more of an Udon style chuncky noodle. Totally doable, but hard to roll thin enough and hard to cut so thin without being incredibly precise. :)

It’s meant to be dry and crumbly at the beginning. Once you knead it quite a bit, it will become softer and gummier.

160grams of salt over 400 grams of flour is going to kill some people. @semiHardBoiled, probably the right thing to do is upload a new video. For everyone reading this, the salt to flour ratio should be about 2%, this is according to the typical baker’s percentage: en.m.wikipedia.org/wiki/Baker_percentage

sousi sousa lol, this is obviously not the first time you’ve made dough. I don’t intend to engage a war of word with you, but when you say things like “use your freaking brain”, I would suggest a little empathy for people that are cooking for the first time and have no intuition about what the ratios should be. People tend to treat this kind of recipes like the Bible.

sousi sousa I just didn’t think the aggression was necessary that’s all, so I had to say something. I did stop myself from adding too much salt, but if you look at some of the responses, I’m pretty sure there were a lot of flour wasted by this video. So I just wanted to point that out to the OP.

I actually fucking followed the 160grams of salt. I'm an idiot. I wasted PRECIOUS bread flour. In this time of coronavirus and quarantine, flour is RARE as fuck. EVERYWHERE is sold out of flour. I'm sorta mad I wasted 400 grams of bread flour, but I should've caught it.

I do not have plastic bags or cling film, in my kitchen. I hope I can assume that I can go old school and just cover the dough in the bowl with a cotton tea towel. I imagine that was how it was done a long time ago in a galaxy far, far away.... uh, before plastic was ruining our mother and her children. Yes, I went there...

It's actually 6 grams of salt. I actually followed the video and put 160g (I'm an IDIOT), my noodles were INSANELY salty. The creator messed up. I threw all my noodles away.
