Professionals use vanilla extract because of its concentrated vanilla flavor. using actual vanilla bean 9/10 times won't get you the desired flavor strength you need. A nice happy medium is vanilla bean paste since a lot of the extracts aren't good quality and that's why they get a bad rep.
