These peanut butter sandwich cookies are such a good homemade version of Nutter Butters. My husband loves peanut butter flavored anything. Especially cookies. He is a big fan of Nutter Butter Cookies, but those things are expensive! This homemade version is even better than the store bought.
Nutter Butter Copycat Recipe
1 C or 2 sticks Butter (softened)
1 C Creamy Peanut Butter
1 C Brown Sugar
1 C White Sugar
2 eggs
1 tsp. Vanilla
2 1/2 C Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
1/2 tsp. Salt
For the Filling
1/2 C or 1 stick Butter (softened)
1/2 C Peanut Butter
2 C Powdered Sugar
2-3 Tbsp. Milk or Cream
pinch of Salt
Mix together the butter, peanut butter, brown sugar, and white sugar until creamy and fluffy. Add in the eggs and vanilla. Mix until combined. Next add in the dry ingredients. Mix just until combined. Put the dough on some plastic wrap and cover. Refrigerate for at least an hour.
Once dough is chilled, pull off a tablespoon size amount and roll into a log shape. Roll this in some white sugar and place on a cookie sheet. Take a fork and make a crisscross pattern on your cookie and pinch in the sides to make it really look like a peanut. (Watching the video helps you understand the shape. It is hard to describe.)
Bake in a preheated oven at 375° for 10 minutes, take them out when they start to turn brown. Let them cool on the cookie sheet for 5 minutes and then transfer to a cooling rack.
Make the filling by beating all of the ingredients together until smooth. If too thick add more milk if too thin add more powdered sugar.
Fill the cookies and then sandwich them together. I try and match the ones that are closest in shape and size before starting the filling process. Store in an airtight container. Enjoy!
