Homemade Peach Cobbler - Old Fashioned with Brown Sugar and Oatmeal Crumble

Old Fashioned Peach Cobbler
Filling
2 lbs. Fresh sliced peaches or 2 (15 oz) cans sliced peaches
½ stick butter
¼ cup cornstarch
2 cups of sugar if you are using canned peaches and they are packed in heavy syrup you can omit the sugar
Crust
¾ cup light brown sugar
1 cup all-purpose flour
¾ cup butter, cubed and chilled
Topping
¼ cup all-purpose flour
½ cup light brown sugar
1 ½ cups old-fashioned oats
1 tsp cinnamon
1 tsp of nutmeg
1 tsp salt
5 tablespoons butter, cubed and chilled
¼ cup maple syrup
Filling
-In a medium pot add the peaches and sugar and ½ stick of butter. Bring to a boil. Set aside.
Crust
-In a mixing bowl, combine the brown sugar and flour. Cut in the butter to a fine crumble. With your hands work th dough to form a moist ball.
-Pat the dough out into the bottom of a buttered In a 12 inch Dutch oven ad 12-inch cast iron skillet or a 9x13-inch casserole dish. Bake with coals until the dough sets up, or if cooking indoors at 350 degrees F (uncovered) for 15 minutes.
-Return the peaches to the heat and bring back to a boil. Stir in the cornstarch and cook until thickens slightly, stirring frequently.
-Pour the peaches over the crust and drizzle over the maple syrup.
Topping
In a mixing bowl, combine the oats, brown sugar, flour, cinnamon, nutmeg and salt. Cut in the butter until crumbly.
Sprinkle the oatmeal mixture on top of the peaches. Finish cooking with light coals on bottom and heavy on top for about 3-5 minutes and then remove from the bottom heat and finish cooking with the top heat (as seen in video) If cooking indoors return to the oven at 350 degrees F for an additional 25 minutes or until bubbly and the top browns
-Let cool about ten minutes. Serve with ice cream or whipped topping.

Kent and Shannon, thank you for ALL you do and, especially for sharing your joy for life. Kent you remind me so much of my dad, not the cowboy part, but your unbridled love of: food, family and, our great country (and those who serve). He did most of the cooking in our family and passed on that skill and passion to me and I'm passing it on to my son. Unfortunately I only discovered, you after God called him home a few years ago. I know he would have loved you guys as much as I do had we discovered you sooner. Watching your videos is the next best thing to cooking with him again and for this I can't thank you enough. God bless and keep you and yours always.

Looks a bit like a crumble we make here in England, usually using Apples or cherries but yeah the crumbly crust done the same way, more of a pudding than a pie but so darn good with creme or custard. Grandma used to make it the best when we would go down to the country in the summer time. Watching this really brought back some nice memories

Kent: God Bless you! My Grandma Cookie made the same type of peach cobbler. It was Sunday dessert. Her meal was Baked Ham, before that fact store bought brand at $200 dollars a ham! Criss cross cut, studded with whole cloves, brown spicy mustard and brown sugar, honey. Old fashioned corn fritters with maple syrup, country green bean. I followed her love of cooking, and did it for 40 years!

OMG!!! my dear grandmother made this just the same....maple syrup and all...she got the recipe from a woman from Kentucky and this is my favorite....the oats make it so good and brings back childhood memories everytime I eat it...thank you for sharing this recipe...you are the best....

By the way....since you make the best..and I mean the best chicken fried steak, can you please do another video on it? I can never seem to get it right..its either done in the middle, but the breading is burned or perfect on the outside but still raw in the middle...and that gravy .....we call it " heavan sent" goodness out here in my family...thats the name we gave your gravy cause no one else has ever made it like yours and I've never had it made better anywhere else....thank you for sharing videos and keep cooking.....blessing to you..

My husband just introduced your channel. I may have to buy some bigger pants! But, most of all, Shannon is a very blessed lady to have a man who loves her so unabashedly. The world would be a better place if all husbands lived their wives like that. We just got some Chilton County Alabama peaches (by far the best peaches in the country, Georgia has nothing on them), from our neighbor. I can't wait to try this recipe out. Crumbles and Cobblers were a favourite of my English grandmother and the whole family. Can't say I ever remember her making one from peaches........we love our Bramley Apple either with or without some blackberries. At our family farm we have a small 'orchard' and out the back a set of 4 disused pigpens with 2inch welded mesh fence type enclosures have fallen prey to blackberry brambles. Pies, Crumbles and Jams galore.

I hit "play all" on your videos since I'm working from home during this quarantine. I also decided to start using my cast iron a lot more to cook with since I had only used it for camping. But I like the end of this video and I thought I'd leave a comment, I was stationed at Fort Leonard Wood "lost in the woods" for basic training in 2004 and again from 2005-2009. I wasn't much for the outdoors at the time but i met a lot of good people while I was there. I really enjoy your channel. I lived in Indiana and Florida as a youth and southern food is among my favorite types of food. I'm not much of a seafood guy but I have watched and still watching anything else. Loads of useful tips and lots of inspiration for dishes to make! I also like that you thank our service members and veterans in every video. It's one of those small thing you don't have to do but you do it and you have my respect and gratitude. Keep cooking Mr. Rollins and I'll keep watching!

I grew up making that same recipe in the 70's as a boy in the Boy Scouts. That is the best recipe for cobbler that there is.

This look really good, I have to try it. I love crumble desserts. I feel like the memories that come with desserts like this make them so good. My favorite peach cobbler recipe is one all the women in my family use. Here's the recipe for anybody wondering, it makes a real buttery and sweet cobbler..way better than any other kind I've tried even from pie shops (people tend to make it with a pie crust like topping which I don't like). Big can of sliced peaches in syrup One stick of butter One cup of flour One cup of white sugar One tablespoon of baking powder Some milk A little bit of salt Preheat your oven to about 350-375 (depending on how fast you want it to cook) Melt a stick of butter in a 13/9 pyrex or a skillet Dump the juice out of the can into a measuring cup, you wanna get it to one cup but if you need help add some milk (I usually add milk anyway it changes the batter) Then add a bit of salt to the batter if you prefer Dump the peaches into the bubbling butter Pour the batter over And by this point, it's already pretty sweet but my momma sprinkles some sugar on top to make a more caramelized layer..I've found this isn't needed cause the juice makes the batter real sweet..it's all about taste Cook for about 30-40 mins and you have yourself some seriously good cobbler. I like to top with some blue Bell vanilla ice cream. It cools your mouth off while you're burning it lol I gotta make yours cause it looks like it'll be another favorite

To this day I still think of my paw paw and maw maw when I smell sausage smoking or a meal cooking with smoked sausage and Tasso;thank you for mentioning grandma and momma and our soldiers,my son gave his life for his country 7 years ago. You are a good man Kent.

I made this right after the video came out. I shared both the cobbler, and the recipe with my neighbors. My mom and dad just moved in with me and I made this for the first weekend celebration. My mom is 86 and she said it was the best peach cobbler she's ever had!

Kent.....I am a third generation Okie and proud of it. grandad made the run in 93 and my dad was born in 09. Mom born in 10. I was born in 55 so we are purty close in age. One thing we ate a lot as a kid was cornmeal mush. I know that isn't fancy, but u might enlighten the folks on a real common depression meal that I love. My grandma was a chuck wagon cook for her husband when he ran a thrash machine in nw oklahoma. I had her coffee pot, until someone stole it a few years ago. Would have been proud to give it to you. I am proud to have been raised with real cowboy morals, and I think you are a good representative of the okie life. Keep up the good work!

Both of mine were born in Texas - one lived in Wichita Falls and one in Graham, not far from where you are. Cast iron was their cookware of choice. Mom's mom could fry rabbit that was as good as the best chicken you could find anywhere.

I do believe that I remember something like this when I was in grade school, back when a whole big meal was a quarter. The food was so good there. Anyway, they had a dessert cup called apple crisp. Looks exactly like this, only it had apples in it. In those days, you could tell those school cooks had love in their hearts. It sure showed it by the food they gave us.

You forgot to boil in water peach skins w sugar. At end you thicken w starch add 1 tsp salted butter 1/2 tsp cinnanon , 1/8 tsp nutmeg, boil and thicken. add peaches. Once peaches are integrated in thick peach rue, add a 3-4 fresh lemon juice drops and mix to preserve fresh peach taste. Then bake peaches in crust

Tried this out this evening. Cooked steaks and baked potatoes over the camp fire. Got in a practice run. In a couple of weeks I'll be taking the cobbler to the river and hopefully canoeing the gear and ingredients. Edit: I did learn to not do it on a school night. At least not when I'm solely responsible for dinner and dessert. Got home awful late and had my wife rushing me to get it done. Needed a little more on the crumble. It still ate great. I also learned that 2 lbs of peaches is different than 2 lbs of cut peaches.

Thank you Kent, as usual this is an awesome recipe. I especially like the bottom crust and the crisp topping. My Mother in Law had the best recipe for pie dough and was always making pies and home made bread. I don't know if she ever bought bread from the store. They had 10 kids and raised them all on the farm in Darlington, Idaho. Love, Love, Love your book.

Both sets of my grandparent made cobblers this way. Loved it most 70 years ago. Still do. Put in in a bowl and pour cream on it is another way to eat it. But now have to use store bought cream. Just isn't quite the same. Thanks for sharing the recipe. Be safe but have fun too.

You should write a cookbook that combines both your other cookbook recipes but written specifically for cast iron and dutch oven to make it easier to bring your book with you into the woods without having to do conversions probably be pretty easy to write just copy and paste with a little editing and a few wording modifications.

Lost my grandma a few years ago. She was a great cobbler and pudding maker. Every now and then, she would be embarrassed by a pie or pudding that would turn out especially sloppy. Heck, those were always my favorites! Lots of fond memories of nutmeg. Can’t have an egg custard or rice pudding without it.
