Homemade Pecan Pie Cheesecake Recipe

This recipe has No processed sugar and tasted incredible ! Let’s go!
Crust
-3 cups walnuts - finely chopped
-1 cup soaked Majool dates
-1/4 cup melted butter
-1/4 cup cocoa powder
-1 tbsp instant coffee
Filling
-200g cream cheese
-1/2 cup maple syrup
-1/2 cup whipped cream
-2 eggs
-1 tbsp vanilla extract
Topping
-2/3 cup maple syrup
-1/2 cup whipped cream
-1 cup roughly chopped pecans
-1 tbsp vanilla extract
Mix together your walnut, dates, butter, cocoa powder, and instant coffee. Lay onto a 9 inch baking dish and bake at 375 degrees for 15 minutes. While that’s baking, make your filling by combing in all the ingredients listed, mixing in between each addition. Add onto the baking dish with filling, bake at 375 for 60 minutes. Also add a baking safe dish of water somewhere in your oven. After 60 minutes, turn off the oven, place a wooden stick in the door and allow it to sit in the oven for an additional 20 minutes. After that, take out and allow it to completely cool. Place in the fridge for 2-3 hours.
Right before serving, make your topping by combining maple syrup and whipped cream in a pan over medium heat. Allow it to lightly boil, you might need to lower the heat to keep a consistent low boil. Stir constantly over the heat for 20 minutes, lower the heat and continue to stir for 5 minutes until it thickens. Then add vanilla extract, stir, and pecans to combine your topping. Lay onto your cheesecake and serve!
Extremely decadent and delicious cake! Mildly guilt free cause of the “no processed sugar” aspect.
