Something I found out and wanted to share: Those plastic parmesan cheese shakers at the store (Kraft or generic) have screw-on lids, that are a perfect fit to regular-mouth mason jars! So if you make your own spices or have dry goods, you can up-cycle some plastic.

Tip when you run out of smaller bags, cut a larger in half, reseal yr ends and make smaller ones. I buy mine in rolls and sizes to my needs as I go. Tfs.

We also buy them in rolls. We have 2 different widths. We also cut them to length. I use them to seal my freezer meals to prevent freezer burn and spills.

When I can I buy all my produce from a local farmer. I live in an apartment so I can't grow a garden myself, plus I'm disabled. I also cook my tomatoes for sauce in a crock pot. I can some pickled peppers, but I freeze most of them like you. I said before and I will say it again. I'm so very proud of you. Not many young people do what you do. I hope you husband knows how lucky he is.

I absolutely love my FoodSaver sealer! I have celery in the freezer from years ago that's still just as fresh as the day that I froze them! I can't garden, and celery is expensive here most of the year (I live in an apartment in Newfoundland), so I bought it up in bulk when I saw it on sale one summer. I don't use it often, but I'm glad I've got if frozen.

Finally!! Someone who cuts peepers like me. Seeds drive me crazy when cutting and they're dangerous if they get stuck in your knife causing it to slip. This way keeps seeds controlled and its efficient for slicing and dicing in uniform size.

It's honestly so refreshing to see mistakes in cooking videos! With canning, cooking or gardening you won't have perfection which should be the expectation, but as a perfectionist I tend to be hard on myself on little imperfections. Loved when you said "not perfect, but perfect for me". Love your videos, thanks for continually cooking and teaching!

Becky, I so enjoy watching your videos! I'm a 68 year old retiree that recently bought an Instantpot Max that I can pressure can 4 pints in at a time which is more than enough for me. I cook my sauces in my crock pot, including apple sauce, apple, pear & pumpkin butters and some juices. I have a compromised immune system so I've had to be really careful with covid so it's been difficult to get groceries unless I have them delivered which can get expensive on a fixed income. But preserving has helped me tremendously! When I was a child we lived on a small farm and the only time we went to the grocery store was once or twice a year to buy things like sugar, flour and other staples that mom couldn't grow. We had cows for milk & butter, buttermilk, sour cream, etc. Chickens for eggs and meat which I remember watching my mom take care of! No way could I ever do that! Dad raised a beef every year and pigs which we would have the travelling butcher take care of once a year. Those were the days that people rented a locker to keep their meats and other frozen items in. My mom had a huge garden every year that I can remember playing among the rows and for a snack there was a section planted just for me with veggies I could pick and munch on any time I wanted. We had plum trees, pears, apples, raspberries and we picked wild huckleberries, blackberries, salmon berries and my mom's sisters came at the time to hunt mushrooms and we'd take a picnic and make a day of mushroom picking. We were dirt poor but I had no idea because we ate like kings ( my mom was a fantastic cook)! You helped remind me of those days, thank you!

@@janonthemtn I grew up and still live in Washington state about an hours drive from the Canadian border. But it was my parents not my grandparents. Back in those days there wasn't social security or food stamps so my parents and my dad's other family members helped take care of my grandparents. Both with money to pay bills and produce to feed them. When they did start getting assistance and my parents were able to start putting money aside my sister became ill and they again went into debt. But they always made sure there was enough food, we had a roof over our head and we knew we were loved.

No, not lost but sold because my dad was laid off from his job at the local sawmill and he got another sawmill job in a neighboring town. The road he had to travel from the farm that winter was treacherous and they were also trekking my sister between doctor visits to Children's Orthopedic in Seattle. So when they had time they began looking for a house closer to dad's work. The next winter we had moved into town, my sister had become worse and was practically living at Children's and my oldest brother had been in a terrible accident at the sawmill my dad had been laid off from. He spent several months in the hospital not knowing if he would ever walk again and then many more months in our living room in a hospital bed. My mom then found a job in a local town and found people to ride with because she had never learned to drive. From that point on I learned to take care of myself but never felt deprived. We all did what we had to including take in my cousin who lost her mom that winter and needed a home. We were poor but she was my mom's brothers kid and without hesitation she became a member of the family. It didn't hurt that we were the same age and had grown up spending time together. Everyone is gone now, including my cousin (cancer) and both brothers and my sister. I can't say I was ever close to any of them except my cousin. They were a lot older than me and my brothers were both out of the house before I started school. My sister had mental issues as well as physical problems and she didn't have many people in the family who could deal with her including myself. It was a large extended family and I have wonderful memories of life with them all: aunt's, uncle's, parents, cousins. Many family reunions, Easter egg hunts on the farm with baseball games using cow "pies" as bases, gathering for Sunday church and dinners and never realizing that we were poor. It was a stressful time but a happy time and my memories are full! 💖

Thanks for the great videos! We dry our peppers in the Excalibur. It saves us much needed freezer space. You can store so many diced peppers in just one quart jar(!) and they easily reconstitute. When you open a jar of dried peppers, they smell so fresh. Great added to soups, stews, chili, etc.

Hi Becky! Love this method. I have a huge time saver tip (in case you've not tried yet) put garlic cloves in a sturdy plastic bowl with a tight fitting lid. Shake, shake, shake and Viola! All the skins come off and you just pick them out! I've done it for large batches like you did today for the sauce. Huge time saver for myself ❤️

Is this after you've smashed it a bit with your knife? I've done this but never had success and ended up with soggy garlic.

@@RebeccaWalshh It works best with the cloves already removed from the bulb of Garlic. I've never had soggy Garlic happen.

@@RebeccaWalshh remove the cloves from the bulb. Put the cloves in the bowl. Cover it with a secure lid. Shake the heck out of it, in an up and down motion. Remove the lid and you will find that the papery husks will be separated from the cloves of garlic. Smashing the cloves with a knife is just another way of separating the cloves of garlic from their husk. The garlic stays undamaged if you shake it in the bowl. If you smash it with the knife it is crushed.

Just a tip I like to cook my dough, spices and oil for about 6 minutes before all the sauce and toppings go on. It gives the crust a nice start on browsing and I’m not worried about getting the cheese burnt while waiting for the dough to cook. I’m a new subscriber and just found your channel. I’m loving your content! I’ve been gardening for about 7 years and have just started canning.

Waited for payday (TODAY!) and now I’ll be ordering myself a roaster too. I’ve Ben doing the multiple pot thing forever. I deserve something to cut down on my workload. We make homemade pizza almost every Friday due to food allergies and having homegrown, homemade sauce in hand is the 💣! Have a great weekend!

You may have already heard this tip but I find it so amazing I thought I’d share: when you need to peel a lot of garlic, break it up, put the loose cloves is a medium or large Tupperware, put the lid on and shake the heck out of it. The garlic will be completely peeled when you open it up. So useful!

It’s pizza night at my house. I am making the pizza dough right now. I used to freeze my dough, but I never remembered to thaw it in time. It worked out better for me to make it fresh each time. I have never tried Ball’s pizza sauce recipe. I will have to check it out. Yes, the roaster makes big batches of apples and tomatoes so much easier.

I am thinking when I get a stand up freezer, I might make some full frozen pizzas with cardboard or box board (cereal boxes) for the bottoms and use the vacuum sealer to seal them but they would have to be smaller pizzas.

From the same Ball book, I highly recommend the pickled roasted red peppers. Awesome on salads, paninis, pizza, or anything! My favorite from that book!

Becky, a useful trick for making pizza or pasta sauce is to add your herbs right at the end, especially basil. Basil has a flavor and a smell that are easily lost if you cook them too much, so what I do is just add it right after the sauce has finished cooking, when it's still very hot. I stir it a bit and the basil smell just comes out so easily, and remains!

My mind is blown - last year I struggled canning you the tomato sauce with my biggest pot and never once thought about my giant roaster to cook them! And ran myself nuts trying to keep up with my husband’s tomato garden, having no idea that they could be frozen, whole! You’ve already made this year’s canning season easier, Becky! The first time I lost a jar I was canning applesauce and the bottom of the jar basically fell off :P While I can count the number of times it happened on one hand it does happen to everyone eventually, particularly the older your jars are. Congrats on the large amount of pizza sauce done at one time, large canning sessions can be so tiring. Last night I canned up 28 jars of chickpeas for quick and easy future hummus as it is a favorite of my husbands.

After way too many years, I just recently learned that using a knife inside a jar may scratch the glass - so little that you don't even know it. Score it is a better term. Then when you heat it up - it cracks open. I also learned the jars with shoulders that I used in the freezer broke due to the liquid turning to ice in the jars and there was no room for the expansion so it would break the jars. Always use completely straight sided jars for the freezer or fill them well below the shoulders. Never too old to learn - I'm 75+ and have a lot more learning to do.

I know this is an old video but I feel like we’re on a similar path with our gardens. I had my first garden in 2019 and each year I learn so much and it’s fun to implement different things each year. I realized my first year it was all about seeing what I could grow - I didn’t think I’d keep anything alive. The second year after my successful first, I wanted to try everything crazy looking and different (weird and colorful stuff). My third last year I decided to grow only what I NEEDED and enjoyed and that was so much better. I still love finding new things I’ve never tried before. It’s so fun gardening. I’m so happy to have found your page.

Just tweeted you!!! For quick garlic peel…separate garlic, place cloves in jar, put lid back on, shake vigorously for a bit, skins come right off.

My kids and I enjoy your channel for the no fuss no muss approach to using what you grow. Thanks for keeping your videos kid friendly. I appreciate that you share the real flaws. Many vloggers would have just edited out the “busted”/no ring jar. Keeping it was honest. It makes you real, approachable, and keeps people from feeling the need to be perfect before approaching new skills. Thanks for being you!

I finally made it! Have watched ALL of your videos from start to finish….well, sometimes I got distracted by titles and watched newer ones lol…..I LOVE you and this channel!! So inspiring, educational and well sometimes just laughing at your hummingbird behavior 😂 I can’t wait to watch new videos! I have a bag sealer as well and we buy our bags in rolls so we can cut to size every time.

ANOTHER one for my recipe book!! Is there ANYTHING you can’t cook??!!?? I think your sweet spirit, and can do attitude are SO infectious!! Even if you’ve never made pizza sauce,( totally me) you wouldn’t be as intimidated to give it a try! I put the ball canning cookbook in my Amazon cart and told my husband that I’m going to give it to myself for my Birthday (on Monday) So,Thank you once again Becky for not only sharing what looks like a really yummy pizza sauce recipe, but showing us all how to can it too!! You are always an inspiration! My 12yo granddaughter made pizza crust yesterday for the first time. We homeschool and this year we have added baking into her curriculum. Next week she will be watching your video making pizza crust as part of her school assignments. I am hoping she will load up her freezer with some pizza dough.
