You should do a side by side taste comparison of fresh broth next to canned broth next to freeze dried reconstituted broth - kinda like you did with the eggs! Would love to know if they all taste the same.

Becky…I feel like you are an old soul. How you view things & how you are homesteading is a thing of the past for someone as young as yourself. The fact your parents only did gardening on a small level just goes to show this is something near j dear to your heart. Of course now you have the perfect space to have an amazing garden. Now that your Dad is retired I can tell your parents enjoy coming over & helping you. Gives them a chance to “garden” without having to deal with it on a FT scale. Your parents are just awesome. Actually your entire family is. After all life would be boring without family. I think they enjoy coming & helping you as well. Plus you pay it forward in canned & fresh goodies. ♥️. Keep it up kiddo. You will only continue to learn what works best & become an expert.

Back in the day they utilized a lot of out door kitchens to keep the main house cooler and reduce fires. I watch a couple in AK that are off grid and they do a lot of their pressure canning outside on their grill. They recently did Moose bone broth. Fun to watch.

Everyone should be creating food security in their homes. Prices continue to rise and shortages are happening whether you see it in your stores or not. Don't hoard everything at once but pick up a few extra shelf stable items and preserve what you can. Labor Day weekend wiped stores around me clean. I've never seen a Holiday empty stores before. It took them over a week to restock all the shelves. That should tell you something.

One of the grocery chains in my area have changed the shelves to a shallower depth to make it look like the shelves are full. Isles are wider now which is nice, but the deception is giving people false hope.

Hi Martha. Yes it's very simple. I make the stock as usual (bones, vegetables, herbs, water and sometimes wine if I'm feeling fancy, simmered on the top of the cooker or in a slow cooker). Then strain the liquid - I line a strainer with clean muslin to make sure I catch everything - into a saucepan and reduce by half over a high heat. When it's cool, fill ice cube trays and freeze.

Couple of questions: 1) How many times in a row can you run the freeze dryer before there's too much ice build up and you HAVE to defrost it? 2) What kind of repair/maintenance is involved with a freeze dryer? Loved the video, thanks!
@kristydechant7120
@kristydechant7120 2 года назад
Hi Carole, Harvest Right says to defrost after every batch. If you do not this causes the freeze dryer to work harder and not as efficiently. This can be done by the built in heater the freeze dryer has or you can leave the door and the valve open and let it defrost naturally. Depending on where you're at and your climate which you would prefer. As for maintenance you need to filter and or change the oil. If something does break they have a really awesome customer service system that will either tell you if you need to bring out to repairman or how to fix it yourself.

My husband and I weigh the trays before and after freeze drying so we know how much liquid per gram (grams are easier for math for us) is needed for reconstitution. For liquid, we will weigh it in a bowl first, and then weigh it in that same bowl again after it's dry. :) You didn't say anything about weighing it so you know how much moisture to add back, but I'm sure you may have off screen. If not, maybe this will help in the future :)

Hey sweetie... couple of things. You absolutely have to defrost the fder every time. Every. Single. Time. You can have the machine do that (which is what I do) or I've heard about people who put a fan on it and pull out the ice once it's partially melted. I just do other things, packaging up the food asap, washing trays, prepping food, etc. Also another thing, I learned from others that a frozen turkey can be cooked in a pressure cooker for 2 hours. Yup... I tried it and it's amazing. I put the turkey (I've done 16# turkeys) in there, an onion, 2 celery stalks, 2 carrots, pepper corns & bay leaves, fill up to the fill line and put it on the stove. Mind you this is my pressure canner that I stack pints 2 high in. Once it's rocking, I set the timer for 2 hours. I let it cool, put the turkey on a cookie sheet to cool faster, bottle up the turkey with broth that I just made. Take the bones, put them in my instantpot filled (to the fill line) with the same seasonings I did with the turkey, and do a 1 1/2 hr cycle and then I have even more broth and I can that up too. I hope this helps.

I'm waiting to see you freeze dry milk. Now that you've done the broth you know a pan of liquid will work. Powdered milk, of course, can be bought. But it's not the same as organic whole milk. I wonder if it would taste the same... For those times when you come home with 11 gallons of milk all at once because it was on sale. It would take less room than freezing it all. And perhaps you could add that to recipes without adding more liquid.

I LOVE your channel! I had never canned before I found you. You have changed my cooking. I love cooking but due to a medical condition that makes it hard. I use to grocery shop on Sundays and then cook all the meals for the week which usually made 2 meals from my recipes. I use gallon size bags for the extra meals and I freeze them flat. We live in the country and don’t go out to eat like we had before, because there is nothing by us except at the gas station deli. I am currently on the look for an upright freezer! So again THANK YOU! 🥰

Hi Becky. Just be aware that no matter how much fat you skimmed off, there will be fat in the broth. It can be freeze dried but, it won’t be a long term item for your pantry. I have a freeze dryer too. I just finished tomato sauce that was expiring in a few months, boy it took 46 hours but so worth it! Blessings

Freeze drying and dehydrating are the way to go if you want to save space in the freezer and have shelf stable food.

I like this idea. I've got some things I need to dry. Thanks for the inspiration.

Very awesome Becky! I’m already thinking about adding it to flavor pastas. Adding dried herbs to it!!

Its good to do both methods just because if water is an issue you still have a water source and you can just drink as it is very nutritious or you can cook with it.

I'm so jealous of the freeze dryer but not owning a home makes this impossible at this time.
