Preparation Timings:
This needs a maximum 2 days to prepare with in between draining and resting times.
For the dough:
2 cups plain flour
Approximately 1/2 cup plus 3 tablespoons water
For the paste:
60g Holsum ( solid vegetable oil), butter or ghee
2 tablespoons oil
2 tablespoons corn starch
1 cup oil for greasing when stretching the strands.
Syrup:
1 cup sugar
1 .1/2 cup water
Oil for deep frying
ground cardamon
crushed nuts for garnish ( i used almonds and Pistachios)
Dried edible rose petals for garnish
Notes:
Storing:
-Store the Syruped Suterfeni in an airtight container for 2 days at room temperature.
- lasts 2 weeks in the fridge.
Draining:
If after the 20 hours you have a little oil left on the suterfeni, drain over a stack of newpapers, lined with kitchen paper for an hour or 2.
Then add the Syrup.

Wslm. After you make the last 15cm stretch, you need to add it to the oil right away and fry. I lift the nest out of the oil mixture, complete the 2 x 8 turns and then stretch 15cm. This process takes less than a minute or so. Frying does not take time either. So once i turn my suterfeni while deep fryinf, i begin stretching the next one. Hope this makes sense. 😊

Don't have a machine mincer to put the dough through to mince so can I try without mincing the dough

You can knead it until stretchy or place in a food processor.😊

Love this one of my fav but need a mince grinder attachment n above all patience. Get it in Bhindi Bazaar, Mumbai year round n miss it so😢 only when some brings to sell fr Pakistan or India 😢

@@nabilasaber Next time pinch the edges on both ends firmly to avoid it from separating into longer and shorter sections. In the end break of the uneven ends before wrapping around the finger.

I am from SA, now living in Melbourne & Diwali is still a big celebration in our home! We love making all the mithai from scratch like we’ve been taught back home but I just could not get to making my favourite Suterfenni ! Every time I come home to SA, I have to buy a whole suterfenni to eat by myself🤗 I Cannot thank you enough for posting this informative video. It came out just perfectly beautiful!!! The ONLY question I have is : how do I make the Suterfenni to be soft & so white like the ones in Durban sweetmeat shops instead of the crispy one produced with your recipe ? Again, thank you for sharing this video especially, God bless you🙏🏼

Hi Roshini. To keep the suterfeni white, avoid frying it for too long. Once the strands crisp up, remove them out the oil immediately. Also completely dunk them in the thin syrup and drain. It takes 2 days initially to soften up. You can also add a damp kitchen paper into the container you are storing the suterfeni or cover with a clean damp cloth. This wil soften it up more. Suterfeni comes out crispy always, but the syrup softens it up. Hope this helps.

If you don't have a mincer, You will have to knead the dough for a good 25 minutes until its smooth, pliable and stretchy.

@@naviesoobramoney4915 You can try. Just make sure you get a stretchy dough. Im worried the dough will just slam from one end to the other as it is a stiff dough to begin with.

I attempted to make it today. Definently a skill and need to practice. While stretching I can see the strands but when I fried it didnt separate. Also came out brown and not white 🤔🤔🤔🤔

Practice definitely makes perfection. The reason to this was that your oil was too hot. Fry on a lower heat on your next attempt.

Yes it can be frozen after frying and draining. Add syrup a day before you would like to serve it.

I saw on her Instagram page, the banana puri process, she let the banana puri drain into flour. The flour can later be used for roti.

If you notice that there is a little oil left behind on the suterfeni, you can drain it further on a kitchen paper for 30min more. I also like to stack newspapers under the kitchen paper to suck up more of that oil. Mine drained out well so i did not have to drain further on paper. You can also use the flour and kitchen paper method. Works wonders.

It is crunchy. However it goes softer when the syrup is added.
