Question...what's the purpose of heating the mixture if you are not including egg yolks in the ingredients? I figure the purpose for heating an ice cream base is to ensure the egg yolks are safe to consume, if preparing custard (french) style.
My answer: It is to blend the ingredients together and dissolve the sugar. I do not believe this recipe would come out the same without heating the ingredients first.
