Pro tip for your deep freezers, get a small white board and dry erase markers and keep an inventory of what you have on hand. You can use hash marks for multiples and erase one whenever you use it. You can even switch marker colors every so often so you know what is the oldest. Helps avoid forgetting about an item buried at the bottom, and let’s you know what you have without digging around. Also, beef tongue taste exactly like pot roast, and it makes awesome tacos! Look up lengua tacos, that’s how it is spelled in Spanish.

You really need a backup generator. It would be a tragedy to lose all that food during an extended power outage.
@oldcalir.e.broker9094
@oldcalir.e.broker9094 3 года назад
This lady is right. It is highly likely a power outage is iminent, given the political climate and severe drought. CA power lines burned to a crisp last year and half the state was literally without power in some cases, for weeks.

I might add an alarm to mine. I accidentally did not shut the door of my freezer tight (I'm thinking something on top was in the way and I didn't realize it) and it was open overnight. Everything thawed, but luckily I caught it in time to preserve several things (frozen chicken breast I canned, frozen hamburger I fried and refroze, and we ate the steaks with friends) I lost 2 1/2 bags of food though.
@aspenram3885

Those chest freezers keep child air in since cold air sinks. I'm from an area that would lose power a few weeks every winter and the chest freezers don't need generators to work! :)

@bill-chichi9701
@bill-chichi9701 3 года назад
@@lisatangen4213 It all depends on your budget. For portable generators I recommend Honda. Add up the watts of the things you want to run on the generator plus extra to prevent overload. A reliable Honda generator dealer can help you.

Our stand up freezer has lasted longer than that. We have a temp sensor hooked to a cell phone alert so we know if the temp starts rising...good thing because the door doesnt always close right. I love our chest freezers but hubby thinks they're hard to find things in so I individual freezer meals, frozen veggies, and hunks of meat rotated into our upright so he's more willing to throw something into the Instant Pot or microwave as it's easy to find.

I do a very similar thing with the peppers. When I package them for the freezer though, I put them in snack size bags and then put those snack bags in the gallon bag. This allows me to only pull a small portion out to thaw and use rather than having to break off or thaw out a whole block. Great job on the food processing! I wish I had been that organized and productive at your age :)

I chop up peppers, spread them on a cookie sheet in the freezer to firm up, then put them in a gallon bag. I use them in my daily 8 vegetable salad and they taste great. I do this with anything I don't want to clump into a frozen mass, berries, roasted cherry tomatoes etc..
@sknap2728

I've used the snack bags (u can get reusable ones) specifically for roasted hot peppers and then add them all to a gallon freezer bag. Pull one out when needed. I also use the tray method for freezing berries then adding frozen berries to quart ziplock. I will rinse and reuse the berry bags. Freeze meatballs the same way, but I don't reuse those bags.

If you want to maintain the crunch of bell peppers, just cook them from frozen. I dice up 3 different colors with spring onions & red onions and freeze them. I like to add it to my eggs in the morning & still enjoy the crunch up to 3 months. They’ve never lasted beyond that time so I don’t know if the texture changes further down the road.

In the morning take off the outer skin. Chop the beef or use a couple of forks to separate the beef. Season to taste, make a Pico salsa with corn tortillas. These will be some great beef tacos! I grow peppers in Canada. I start them on a heat mat in a warm room (65- 85°) , in March. In your area, I would recommend planting them out in the garden, after they have been hardened off for a week. Usually they have 6 to 8 mature leaves when they are ready to plant out. I companion plant to keep them healthy. Good luck. I love almond milk. Brightest Blessings

I had two turkeys in my freezer and I thawed them and roasted them both at the same time in an electric roaster. I sliced them and froze them in small portions covered in gravy and we have been enjoying them. I also put the carcasses right back into the roaster, covered with water and cooked them for 24 hours and canned the nice broth. I can chicken breasts and beef chunks about every three months. Chest freezer ARE better about utilizing space than uprights. Plus they are more energy efficient: Every time you open an upright, the cold 'falls' out of it and is replaced by warmer air that has to be re-chilled....whereas it stays IN a chest model.

We use beef stock in our spaghetti sauce (and in any stew I make, if the recipe calls for water, I use stock), and I also use beef or chicken stock in my sweet and sour sauce.

I preserve my celery the same way you do your peppers. I tend to chop up a bunch of celery, use what I need for that day. And then put the rest in the freezer. It freezes well and is great to use in Chili's and stews in the future.

Cows tongue is possibly one of my favourite Deli type meats. It looks like you may have to skin that tongue though. Male a slit along the length and using a pair of pliers pull the “skin” (outer membrane) away from the meat. To cook roll up the tongue and put it in a pan that is a tight fit cover it with water and bake in the oven for an hour or two (it really depends on the size. When cooked drain off and keep the liquid and put the tongue back in the pot it was cooked in. Put a saucer on top of the tongue and place some weights on top so that the tongue is compressed leave in the fridge at least overnight. You can add the. Cooking liquor over the tongue if you like this becomes a jelly when cold. It’s really worth giving it a try. All the best to you and yours from Scotland. Rab

I was just going through some of your older videos and I know this is an old video, but...two things I want to mention beef tongue makes great tacos and it is the most tender meat and delicious. Also, lamb...I understand what you mean about the gaminess, but I find I only like lamb on the grill. It has a whole different flavor in the oven. It does take a bit to prep though to get it ready for the grill, but you are totally missing out if you don't try grilling it. Yum! I love your videos they are so full of information. Thanks!

I don't what you did with the cow tongue you spoke of in this video but in the future try sous vide. We tried cow tongue for the first time 2 years ago just after my brother-in-law died from covid. He had always talked about eating "tongue 'n cheek" for one of our family dinners and had gotten the meat for our Thanksgiving dinner that year. It was wonderfully tender and flavorful. It was also a great way to remember him on that first holiday that he was not with us. Hope you try it sometime!!

Hey! New in to the channel. Solution for the potatoes: pre cook them (cut them and boil or fry them until they are almost cooked), let them dry and after that you can freeze them. Mashed potatoes freeze perfectly as it is.

Yes, mashed potatoes are sooooo easy to freeze, I just scoop them onto a baking tray (as many as possible in a single layer) and then slip the tray into freezer and open freeze them……. once frozen I put them into plastic bags, ready for when I want them. I remember coming in from night duty and just taking out a lovely big frozen casserole and a bag of mashed potatoes….. hey presto dinner was ready. It’s worth all the extra work.

@@AcreHomestead BTW, thin sliced blanched potatoes dehydrate beautifully for scalloped potatoes. I’m going to try to dehydrate diced potatoes this fall.

The soup bones could be used the make beef broth. All of the vegie parts could be used to make veggie broth. Same for chicken pieces you would normally throw out. Just boil with salt and pepper for a few hours and you have broth!!

Beef tongue is very expensive. You can cook the beef tongue in the pressure cooker. Remove the skin after it's done and it's all meat. You can make corn tortilla tacos and add pico de gallo, it's very good. In Mexican cooking we really enjoy that part because it's all meat.

I grew up on a farm & we ate cow tongue, when dad butchered. When he'd butcher a hog they'd cut the fat & skin off & fry it up, that was cracklin & so delicious. Down here in La. we always smoked our sausage, & mom loved hog head cheese. We cooked with the fat from the hog, which is called lard. We lived off the land & the garden & orchard as much as we could. 💜

WOW! What a blessing to get all those canning jars for free! I don't do a lot of what you do as far as buying in bulk but what I DO do is make pot pies for the freezer often. Turkey, chicken and beef. I make my own broth and make some freezer meals by cooking extra and making one for the freezer. I used to bring my dad food often. He passed away last year and I've kind of stopped cooking so much. Lost my desire or something. I've been watching you for a couple days now while I cross stitch and have been thinking and planning on getting back to it and to try some of your tips and tricks. Also, my husband works at a grocery store so he shops for something on most days. He finds lots of deals and marked down things and I NEVER have to shop. I like your channel.

I have the same bag of pecans in my freezer. I could eat soup everyday! Tongue is delicious but you need to boil it to be able to peel it you've got to take the outer layer off. It makes great sandwiches sliced thin. I lived in the UK so we ate beef tongue and ox tongue which was called lunch and tongue. It's really good and you could look for recipes for New York deli sandwiches because they you make a lot of tongues sandwiches. I grew up on leg of lamb and it was made every year for my brother's birthday as well. I love it! I have lived around the world in eight countries and expanded my palate and my mind greatly. :-)

Please, please, please try the beef tongue. I guarantee you will like it. Once you pressure it, let it cool just enough to peel the skin off. You can slice it like roast, so good. If it's the look of it, once you skin and slice it you can't tell it from roast. It is so much more tender than any roast you ever had. Be adventurous!
