Would adding those low rolling resistance tires help compensate for stop and go driving or no?

It does have “eco” tires on it but yes tires do make a huge difference in fuel economy.. For example a stock 350z can vary from 20mpg all the way up to 29mpg depending on the type of tires it has on it.

I installed Lean burn on my CVT 2002 Honda insight from a JDM CVT Insight, and with the RE92 tires pumped up to 50 PSI I can get about 70 to 75 miles per gallon on the highway. And absolutely drafting helps even more, if I were drafting for a long portion of the time id average 90 + mpg, it's all about reducing wind drag on the car. The cars coefficient drag is said to be 0.25 if you can lower that number then yes you'll get better mpg. But without drafting I average 70-75 mpg. Not bad for a CVT automatic car.
