Jack had a couple of strokes at some point, hence the arm. He was even in a chair for a bit from what I can recall. Whether or not his uh eating habits on the show lead to the strokes, or just his general consumption of full sticks of butter, we may never know.

@@HonestTries I listened to one of his other videos, can't remember which one, but states that his mother (I think?) died from a series of strokes. I would love to see him change his eating habits especially if he already has such health problems in his family. Just hope it isn't too late at this rate.
Jack's arm doesn't work because he had a massive stroke while driving, and it was his 3rd or 4th stroke if I'm not mistaken. Recently, he had his first heart attack. Frankly, he ought to be a salad channel after all these strokes and heart attacks--be careful how much you eat like him! When people were requesting the teriyaki burger, maybe they meant the bison burger. That one has a patty similarly prepared in the Asian burger but topped differently with some cheese (provolone?), tomato, banana peppers, and Jack’s teriyaki. That one would probably fit your tastes better, but don’t follow the video completely. We don’t want you to die from food poisoning.
Btw, just a little tip to anyone who plans on making their own Siracha mayo. Go the extra step and squeeze some lime juice into it. Really takes it up to the next level.
I’m not trying to make light of his condition but I think eating raw chicken and doubling the amount of every calorie ridden ingredient is what got him in that state.

This definitely seems like the best dish of Jack's I've seen so far, like he put some actual thought into it instead of dumping a can of beans into mayo. I don't really get the water chestnut though, like why someone would want hot water chestnut on a burger?

Neuro ICU nurse here. From what I recall from watching Jack back in the day, he suffered a stroke. It's not uncommon for stroke survivors to have weakness in one side of the body. The left and right sides of the brain control the opposite side of the body. If you were to, for example, have a stroke damaging the left side of the brain, you may end up with weakness or total loss of mobility on the right side depending on how much brain tissue died before the issue was fixed.
Sriracha stopped getting made last summer due to the red chili crops failing last year, so seeing you've just gone out and bought some tells me it's not hugely popular where you are, haha! Mustard crops also failed, so regions that are heavy consumers are all wiped out right now, too.
Oh man, I had no idea! Yeah, the shelves were totally full of sriracha. Sad about mustard too as I use it a lot. Prices for groceries have definitely gone up. I almost cry at checkout every time.

personally, i've always cracked eggs on an edge- edge of a bowl, counter, pan, whatever. i just think that it's a cleaner break when it's cracked on an edge.
I appreciate the Donkey Kong music. DK2 is my fav SNES game :) To improve the recipe, I would have chopped up the water chestnuts and mixed them into the meat. Burgers don’t need egg and breadcrumbs mixed in and I probably wouldn’t mix in the teriyaki, I’d cook the burgers and caramelize the sauce on the outside. I think I would leave out the hoisin and use sriracha ketchup or make my own by mixing the two. Use Kewpie instead of mayo. Use the salad mix, but instead of using any of the mix ins or dressing, make a proper slaw with a little kewpie and rice vinegar and maybe a little sugar if needed. (The burger won’t be as sweet without the hoisin and the salad dressing… maybe even use hoisin as the sweetener for the slaw?) Might not need a pickle with the rice vinegar, but if desired do a red onion quick pickle. And for the love of god those buns need to be toasted! Thanks for trying this so we don’t have to!

Not necessarily something for this burger, but if you like things being a little bit more spicy I wholeheartedly recommend replacing pickles in a burger with pickled, sliced jalapenos: so good
@@jogiff Precisely for the reason you don't like them. The acidic tang that pickled foods add to a burger help to balance out the richness from the meat and the fat. If you're not a fan of pickled foods then it's not going to be for you, but I imagine you would still add something like ketchup, mustard, or a burger sauce to add some acidity to the burger. I don't think there's anything wrong with adding just normal jalapeños, but I was mentioning it because I enjoy them as a substitute for pickles
Jack is at least still able to do his cooking show and seemingly still live mostly the same as before the strokes, which is a lot more than many people who has had them. In that sense he's a lucky guy.
I understand that Jack's cooking is very unhealthy and most of the stuff he makes looks utterly revolting, but when I look in his comments section it just makes me so sad how many people are actively mean to him. I'm glad you're not unnecessarily cruel!
Burger patties do not need filler, if you make this again skip the egg and bread crumbs. For recipes that call for binders, like meatballs or meatballs, the breadcrumbs are usually soaked in some kind of liquid, milk, cream, stock; to avoid coming out like this dry ass patty above.
Jack has had salmonella poisoning _four times_ so far, and two strokes (or possibly three, can't remember atm), which is why his arm is the way it is. Most likely it's not only the arm though but the leg as well. Depending on what part of the brain is damaged by a stroke (and the severity of it) it can lead to either the entire left or right side of the body to become paralyzed. With regular physical therapy it is possible to regain strength and mobility in the affected limbs but the amount of improvement depends on things like age, severity of the damage and the persons willingness to work hard at getting better. My uncle had a stroke in his late 50s and didn't care to do very much to get better (he was an alcoholic) so he spent the rest of his life in a wheelchair with almost no mobility or sensation in his right arm and leg. My brother-in-law was 45 when he had a stroke two years ago because of a brain tumor. He was a very active and healthy person and worked really hard to get better; he was walking and had regained almost full mobility of his hand, arm and leg within 12m only needing a leg brace and had a slight limp. Now two years later you would never know he ever had a tumor or a stroke, dude is as good as new and back to playing badminton and running and working as an arborist again. TL:DR age, overall health, motivation and hard work is key in recovery after a stroke like the ones Jack has had.

I honestly didn't think you'd even read my conment because it was so long, but I thought I'd share some of what I know and have seen of the repercussions of a stroke as well as the recovery from it. I used to work as a in-home nurse (I'm Swedish so I don't know what the correct job title is) for approx five years total, two years with one patient and then three years with the other, both were stroke survivors with quite different issues due to the damage occured in different parts of their brain, one had epilepsy while the other suffered from severe short-term memory loss for example. They both had ofc other issues as well but both of those examples are not uncommon "side-effects" after a stroke. I also have a 15y.o son that suffered multiple strokes as s newborn after getting meningitis from a strep b infection at birth. He is an excellent example on how much age matters in how well a person can recover from braindamage caused by a stroke or some type of head-trauma; He had quite extensive braindamage after three strokes, meningitis and several "pus-pockets" all over his brain as well as being septic, all before he was 48h old. We were told that he _will_ die, that he wouldn't survive even three days. Obviously he proved the Dr's wrong. We were then told he would never walk or talk, that he'd be more or less braindead. Well, not only does he speak, he speaks two languages, not only walks but runs, swims, goes to the gym and plays sports. He has moderate autism, adhd and is slightly intellectually disabled, goes to a special ed school. He'll never be able to be fully independent, he will need help managing bills, buying and cooking food etc. But considering what his prognosis _was_ he's a frickin' miracle! And this is because his brain was so young when the damage occured, it hadn't yet developed specific abilities in specific sections of his brain like an adult brain has. So as he recovered and grew up, the healthy parts of his brain compensated for the damaged parts as much as possible, so that because his frontal lobe was badly damaged (for example) the abilities normally handled by the frontal lobe in a healthy brain developed in another, undamaged part of his brain instead! Sorry for this super long response, but as you probably understand, this is a topic I am very passionate and fascinated by since it has been a huge part of my life, both worklife and personal life. If you read this novel-length comment, thank you for doing so and regardless, I subbed and turned on all notifications, I really like your content and recommend you try recreating some of Kays cooking if you haven't already! Quick pickle your water chesnuts in Ice-water, white or rice vinegar, some chilis (if you want), Some soy sauce, and some sugar. They'll be ready in a few hours to eat but overnight is best. No heat required.
@@HonestTries Good with cucumber and really any veggie too. If you do anything that's like cucumber or zuccini or bitter melon also shop a ton of onion to put in. The sulfur compounds made it crunch better.
Thought it was just an average homemade burger only with teriyaki sauce added. Then you broke out the can of waterchestnuts and threw a prepared and dressed salad in the bitch.
Jack's had a stroke (in fact maybe even as much as four) which is why he can't use his arm. You know you should use your left hand for more authenticity.
What made this whole thing distressing is I want that burger; but with salt, pepper, cheese, maybe a pickle, a light condiment only...because everyone loves the taste of home grown beef burgers! Eggs and beef. Might as well own a diamond farm, bro.
I've always perceived water chestnuts to be filler - they don't taste like anything, and they're only there for some crunch. For this burger, I think that the ketchup/hoisin combo is unnecessary, given you already have sweet from the teriyaki, mayo and dressing. And if you want something pickled + heat (+funkiness), I think kimchi would do the trick.
I really do feel like this is something I could really enjoy if I just went with a normal burger, but kept Jack's toppings! I'm pretty sure the teriyaki sauce is why the burgers burned and I'm not fond of that idea, but the slaw toppings sounded great
Just a recommendation, if you're making a thick burger (or basically any burger that isn't a smash burger) don't squish down the patties after flipping. That causes the burgers to lose some of the fats and juices built up inside, causing them to be more dry. Funilly enough, I do think Jack said the same in his video on the Asian burger.
Dude I definitely feel you about feeling sad about cooking with jack in the present day. I definitely just feel pity for him… he had a stroke and can’t use his left side of his body or whatever. But also he’s kind of a horrible person, (see choking Garrett for smoking weed.). It was a stroke, he had a stroke was what did the arm thing. Generally speaking you don't need a lot of binding agents or flavorings in a burger, just in the toppings to make it something. Jack doing this makes it more complicated to cook, cause the terriyaki has sugars which is most likely why it burned. "Fried" water chestnuts are not really a thing? I guess it was to be a sort of Asian variant on fried onions? The slaw with pickled radishes, a terriyaki sauce with chili in it would be a lot better imo. Also! Brioche bread can change your life if you get it for things like French toast or bread pudding.
"hm." sounds about right as an opinion on this as a whole, definitely could use some heat to balance out the sweetness. also - panko as a binding agent definitely is a concept i'm going to be flabbergasted by for the next few days, not gonna lie.
