We present to you the simple recipes of Kiyomi Mikuni, the owner and chef of the Mikuni hotel, a French cuisine restaurant in the Yotsuya district of Tokyo.

【Ingredients】 for 2 people
6 pork spare ribs
1 carrot
1 onion
2 cloves garlic
10g fresh ginger
1 tablespoon honey
100 ml white wine
300 ml water
2 sprigs rosemary
2 teaspoons soy sauce
Salt and pepper
【Preparation】
・ Season the spareribs with salt and pepper.
・ Cut vegetables into large pieces.
・ Chop ginger.
【Procedure】
1. Pan-fry the ribs without oil.
2. Add onions, carrots, ginger and garlic and fry.
3. Add honey, white wine, water and rosemary. Season with salt and pepper. Simmer for 30 minutes. Then, to enhance the taste, add the soy sauce and turn off the heat immediately.
4. Leaving the ribs and cooking juices in the pan, remove the vegetables to a food processor and blend to obtain a puree.
5. Arrange on a plate.
