After a huge relapse with the Flu, we are finally on the road to recovery.
We are going to keep things pretty easy with a simple but delicious honey butter chicken recipe made in the electric skillet and served over sunshine rice.
~Ingredients~
(Per pound of chicken)
•1 Tbsp. olive oil
•2 Tbsp. butter or margarine
•1-2 chicken breast, cut into large
chunks
•1 large clove garlic, minced
•2 Tbsp. honey
•1 1/2 Tbsp. apple cider vinegar
•salt & pepper to taste
•parsley for garnish (optional)
~Directions~
▪Add oil & a 1/4 of the butter to a hot
skillet
▪Add minced garlic, stir well
▪Add chicken, salt & pepper.
▪Sauté until chicken is slightly brown
▪Add remaining ingredients
▪Cover & simmer about 30 minuted
or until sauce is slightly
carmelized, stirring every 5-10
minutes.
▪Serve over rice or mashed
potatoes
▪Garnish with parsley (if desired)
