We are thankful to have been in the desert southwest during the biggest part of the polar vortex. We're also very thankful that all our van, rv, & SUV dwelling friends have survived as well.
☆☆Ingredients☆☆
•1(15oz.) can garbanzo beans,
rinsed & drained
•1(15 oz.) can great northern beans
rinsed & drained
(Substitute: Cannellini or Navy bean)
•1/4 c. finely diced cucumber
•1/4 c. finely diced radish
•2-3 Tbsp. finely diced carrot
•2-3 Tbsp. finely dice red onion
•1/2 jalapeño, seeds removed &
finely diced
•2 Tbsp. roma tomato, finely diced
•2-3 Tbsp. fresh parsley, rough
chopped
•1 large dill pickle spear, finely diced
•1 tsp. old bay seasoning
•1/2 tsp. salt
•1/8 tsp. ground black pepper
•1/3 c. vegan mayo
•2-4 pita pocket bread, cut in half
《Optional toppings:》
~Spinach
~Sliced tomatoe
~Sliced avocado
~Sliced radish
~Dill pickle
☆☆Directions☆☆
▪Add rinsed and drained beans to a
bowl
▪Mash with whatever you have,
until it's partially chunky
▪Add everything except optional
toppings, mix well
▪Serve in pita pockets with optional
toppings of your choice
