Hey! The bitterness from the lemon zest can actually be attributed more towards the white parts rather than the actual lemon zest (yellow part). To get just the lemon zest flavor without the bitterness, avoid zesting one area too much. Generally, I like to do the "zesting motion" twice, tap the microplane/grater/zester to knock the lemon zest into the container, and move onto the next little area. I repeat until all the zest is gone :)
