Step1
Place bell peppers over flame until skin blackens, seal in plastic bag, peel away the skin and wash.
Step 2
Trim away fats and tendons from chicken thighs, cut into squares.
Marinate briefly with white pepper, salt, egg white, and cornstarch.
Step 3
Use a brush to remove dirt from mushroom and slice. Cut onions and peeled bell peppers into squares.
Step 4
Melt butter in saucepan, gradually add flour and stir until mix well, gradually add milk, use sieve to remove lumps so that the sauce is smooth.
Step 5
First fry onions in hot wok. Fry mushroom in butter and oil, add bell peppers, onions and white sauce. Mix well. Use another wok to fry chicken till 70% cooked, remove black bits and add into white sauce.
Step 6
Add chicken broth, lots of white pepper, right amount of salt, cook until chicken is cooked.
Serve with white rice.
