Hong Kong Style BAKED PORK CHOP RICE (ft. my Chinese Grandma)

In this video, My grandma "Popo" shows us how to make Hong Kong Baked Pork Chop Rice. What's special about this dish is everything can be eaten separately, but it also taste amazing baked together!
This video was filmed back in early 2020 during the height of lockdown. Apologies for the shaky camera. I'll be releasing some great content from 2020 through the next couple of weeks. HOMESTYLE CHINESE FOOD.
Pork Chop Brine Ingredients
3 Tbsp Salt
3 Tbsp Sugar
4-5 Cups of Water
Pork Chops Seasoning
1 Egg or Half of Egg
Creole Seasoning
Cornstarch
Vegetable Oil (Oil of your choice)
Pork Chops Brine Procedure
In a large container add salt, sugar, and warm water. Then add the pork chops and store them in the brining liquid refrigerated for 1-2 days. Brine the complete pork chops (bone & all).
After they are brined for 2 days, rinse each pork chop of the brining liquid and pat dry. We like to pound them for further tenderization. Popo likes to cut some fat off from the pork chops. She also likes to cut the bones off and use them for soup.
First, dry the pork chops and cut them into smaller pieces if you like. Second, season them with the seasoning of your choice. We use Tony Chachere’s seasoning. Next, coat the pork chops in egg with a little oil followed by a generous amount of cornstarch. To cook, in a large sauté pan, bring some oil to high heat and brown both sides. Once color is achieved on both sides remove from the pan. You can finish cooking them in the oven set at 350 F for 10 min. If you are making the baked pork chop rice do not put them in the oven right away. It will go in together with the rice and tomato sauce.
Tomato Sauce Ingredients
2-3 Large Tomatoes
2 Tbsp Ketchup
1 Tbsp Oyster Sauce
1 Tsp Sugar
Scallions to finish optional
Vegetable Oil (Oil of your choice)
2 Tbsp of Water
Tomato Sauce Procedure
In a medium size pot, bring some oil to medium heat. Then add your rough diced tomatoes and the flavorings into the pan. Next, add water and cover. Cook on medium-high for 5 min. After 5 min you can finish with fresh scallions and remove from the heat.
Fried Rice Ingredients
1-2 Cups of Leftover Rice
½ cup Frozen Peas
1 Egg or use the Leftover Egg
1 Tbsp Light Soy Sauce
1 Tbsp Dark Soy Sauce
Vegetable Oil (Oil of your choice)
Fried Rice Procedure
In a large sauté pan or wok on high heat, add some oil and fry the egg for 20 sec, then add the rice and stir fry for 1 min on high heat. Next add the frozen peas. Then add your soy sauce and flavorings to your taste. Sauté on high heat for another 1-2 min. Set aside.
Pork Chop Rice Assembly
Put the rice on the bottom of an oiled heat proof pan. Next add some pork chops over the top of the rice. Then pour the tomato sauce over the pork chops. We added some grated parmesan cheese (optional) to finish and baked at 350 F for 10-15 min. The pork chops will finish cooking and everything will become a wonderful medley.
The plain pork chops that you pan fried should also finish in the oven at 350 F for 10 min before eating.

Watching you and PoPo cook makes me miss my PoPo, she is Cantonese from GuangDong and makes awesome Cantonese food, especially soups, all the time. Just wished she was still around so I could cook with her, instead of trying to guess her recipes base on memory. If you and PoPo could share how to make authentic Cantonese style soups (I.e. watercress soups 西洋菜汤) and what ingredients are needed to make a soup Cantonese style, that would really help me learn more Cantonese home cooking!

You are so funny....(2:47), my MIL (mother in law) always refers to my husband as "dai tou ha". Direct translation is "big headed shrimp!" Meaning the head is bigger than the body. Always, stubborn!
