Al, a tip I learned while working in a bakery. After you fill the cake pans tap them on the counter top a few times to remove air bubbles. I also use a 325 oven and bake a little longer to make a more level cake. The bakery also shaved off the top of the cake before they removed them from the pans and stacked them cut side down.

We got that rain up here in Quebec, Canada, too... irrigation ditches overflowed, the neighbor's field got completely flooded over... then it turned cold and froze solid overnight. Now that the solstice has passed, that probably means it'll stay a frozen skating rink until March. Crazy topsy-turvy weather the past years. That aside, Merry Christmas to you Al, Gina and Olivia. It's 6:14 am here, I'm up and off to Walmart for a few things for Christmas dinner before the mad rush for last minute Christmas presents. The boiling water helps 'cook' the eggs a bit which makes the batter more like a custard. A friend taught me to freeze cannoli 'dip' and eat it like ice cream. Science!
