Looks amazing. I've been wondering about trying potato starch for a binder. I can buy it close to my house.

I don't know how you do this man.... Running the business and all... I'm just going to have to assume you're some sort of sausage-fuelled super-being that never sleeps 🙄. Seriously man... so much respect for the work ethic. I've decided I can't ever comment on one of your videos without asking at least one question... but this one is personal. That profile pic of you in front of all the parma hams.... may I ask where that was taken? It's a very cool pic and I believe if I was ever able to get into a room like that, I would need to be dragged off like a 60's protestor. 😬

Hey there Joe I really appreciate that man, genuinely. I am sausage-fulled but I don't know about super being lol. That pic was taken just outside of Parma at a culatello shop. Best trip of my life, I still have the 15lbs of body weight I came back with from that trip haha

I am sorry if this was mentioned in the comments already but what cut of beef did you use to make these?

I LOVED this sausage. Just delicious. I'm adding it to my offerings for sale! The Polish Krakowska is another one being added. WATCH THAT VIDEO TOO!

When making sausage start your smoker low temp @ 120% f, for one hour no smoke, damper wide open. Then 140% f, for two hours, add smoke damper closed half way. Then close damper no smoke, temp @ 170% f, until you reach desired internal temp.

uh oh haha. O well live and learn. I probably wouldn't eat them though haha. But ya start low and build your way up. Also I have two sets of drip pans in my smoke house to keep fat from dripping on the element.

Can u use powder milk instead of starch
@jamesmckeon8251

Yes it works great been using it for 50 years never use over 1 cup per 25lb or it will get to creamy

You can you bet but I think the potato starch would add a different flavor then powder milk.

I found this video annoying your constant references to the spices but what are they please and cooking smoking times also needed

Like we asked for Russian sausage? Very poor taste. For celebrating you choose Moscow. Just plain ignorance.

Think for yourself. Study history and don't blindly believe everything the media tells you. Ukraine is not Jesus Christ and Russia is not Darth Vader.

@@MrRufusjax I do think for myself. What history are you implying that I need to learn? That the Russian people are oblivious to what is happening, that they are clueless and victims too. History tells me that the Germans tried the same tactic. You and the tucker carlson crew enjoy your time together and open your eyes to what is really going on and leave American business alone. Something tells me that your idea of 'history' entails the few decades that you have been alive. Little people like yourself throughout history have tried to inflict their will on the world stage while their country folks either support outwardly or in the end play ignorance and cry for mercy. But please inform me of what history you are talking about instead of just opening your piehole and yakking for the sake of yakking. Let me see your knowledge of history.

I think that most butchers across the world get into their industry because they want to feed people. They have an appreciation for meat and sausage is a sort of art form that they get to feed to people, and hopefully those people enjoy the food that has been made for them. I doubt the butchers of Russia much care for geo-politics sort of like me. I do bet I could sit down with any butcher across the world and have more in common with them then not. What I am saying is this is a channel about sausage making, and somehow people across time and nations share the culinary art of sausage making. One thing among many many things that should remind us we are more alike then different.
