Here is a video about the recipe of hotel style crispy masala dosa. many of us are masala dosa lovers, but sometimes fail in preparing crispy roast dosa. In hotels, they add maida and sugar to get good taste and perfect structure. Similarly everyone knows about adding baking soda. Here we skipped baking soda, but added maida and sugar. These are also completely optional so that you can prepare a crispy dosa without these 2.
*All other ingredients are must and their proportions should be proper.
Trick number 1 is to grinding the batter(avoid mixi max.) and trick number 2 is to getting batter fermented well.
*And ofcourse spreading dosa thin is a skill too.
*And the flame in which you are cooking also matters.
*Dosas, to turn out roast, need to be spread over a perfectly preheated tava. (Not more or less). If the tava is heated more, spray some water on the tava and adjust the heat. *Greasing the tava with ghee or oil is another point to be noted.
*After spreading the dosa, adding ghee/oil is also becomes important.
By considering all these points, one can prepare a crispy dosa.
Ingredients:
Dosa rice/broken rice- 4 cups
Urad dal- 3/4th cup.
(If you grind the batter with mixi, add 1 cup urad dal)
methi seeds- 1 tsp
Maida 1/2 cup
Sugar- 2-3 tsp.
Oil & ghee to grease the tava
For Baaji-
cooked & smashed potatoes- 3-4(acc. size)
chopped onions 1-2 (acc. size)
chopped green chillies,
crushed ginger
curry leaves
coriander leaves
tempering items such as oil, urad dal, gram dal(optional), red chilli pieces.
