At the international headquarters of the Brahma Kumaris in Mount Abu, Rajasthan, India, thousands of volunteers work around the clock to feed 40,000 people. And since the 1990s, the kitchen has relied on concentrated solar power to generate steam and cook most of these meals.
We visited the headquarters during a special holiday known as Baba Milan to see how the volunteers prepare these meals in such big batches.

As an Indian, thank you for covering this in your feature. Would add a few things to help other viewers - 1. The food prepared is as part of 'prasad' at a Hindu religious place, and it says it follows satvik rules. That means it will be only veg, and they'll not use onion, garlic in the food. And some other restrictions too on which lentils can be used. 2. To help with the lack of garlic, a lot of asafoetida is used. It is also usually used more in Rajasthani cuisines. Helps with digestion too. 3. The other flatbread they made is called Thepla. It is like Paratha but instead of a stuffing, the masala and flavour agents are added directly to the flour. They are way thinner than a paratha. Methi (Fenugreek leaves) theplas are the most popular. 4. And lastly, rotis are not supposed to be crispy 😁. Rotis or chapatis should be soft and light.

I wish the US had even half of the generosity that India has. But no, it's a dog-eat-dog country. If you're not at the top of the financial pyramid, you struggle while living off paycheck to paycheck and food stamps. India seems like the kind of place where it's hard to go hungry. Imagine if we had mega-kitchens like this for our holidays. We'd need so much meat, though. Tons of turkey and ham for Thanksgiving and Christmas, so much beef for 4th of July burgers. I think vegetarian and vegan is still a hard sell for a lot of us. I'm all for it, as long as it tastes good, and doesn't have gluten or lactose, or spicy. I'm such a huge spice wimp.

For centuries Dharmic faiths have been seen as backward, pagan, superstitious, deceiving practices, a belief which even transcends into the minds of the educated youth of India to this day. But if we take a step back and look into the broader aspect of things, these religious monasteries don't even have 1/20th the wealth and patrons of the secular political parties of the country, yet they are able to free healthy food daily to a 100,000, while the uber rich politicians with promises could not even provide a job, let alone feeding daily. So the hate and condemnation that our schools teach against our religion, is it justified? are we racist to ourselves?
