@Squirtle Japan didn't have much to be envious of when they were colonizing Korea, parts of China, and the islands below. Their explosive growth in technology occurred after WWII, after they had to give up their colonies due to them being on the losing side of the war.

Alright, for years i could only react to these videos by drooling. But I'm done with college in the U.S. and now in Seoul. So I'm going to this restaurant. I will be eating and drinking (a lot) by myself, but I don't really care.

@ He said that the "party" people coming in that night wanted a more expensive meal. He said that meal would cost 50,000 Won and didn't specify how many people would eat for that much or if that was a per person price or if that included any alcohol. I am guessing that based on the price he paid for the fish that it was probably per person for the sushi and not including the alcohol.

Do recall 50k Won (about 45 USD) is the EXPENSIVE end of his Omakase, so his normal prices could legit be 30-40k Won, which is just nuts. How does he turn a profit :O

This is important. The loss in translation makes it seem like he's "using" his family to pursue his other dreams via a stepping stone, when in reality he's saying he wants to uplift them as well.

Agreed- I think using the word “foundation” would have been a better fit to be honest. “Stepping stone” has a subtle negative connotation that makes it seem like this dude has a master plan for his own gains, when in fact he just wants to share the good times with people he cares about. Other than that though, props to the translator for doing a great job on the vid!

@snowangeliquexx Highly doubt he can. He saw a Korean sushi chef downing glass after glass of soju and that must make it "hella Korean". What else is there to say? The guy works hard, sushi chefs around the world work hard, it's not limited to South Korea. He seems like a friendly individual, most small omakase chefs like this generally are. You're cooking 5 feet away from your customers it makes sense to be a people person.

Also, gimbap is traditionally much more flexible than sushi, in terms of variety.

He joined the customers in drinking now that's rapport, then he pretends to be a little inebriated and gives tuna on the house, that's connection, he plays with the camera crew now that's showmanship, and lastly he shares his hopes and dreams, now that's emotional tactic to garner support. I work incredibly hard and work very long hours in an extremely competitive field and this guy beats me. And he is talented and not crabby even if he is tired and strives to be the best at all times. This is a fantastic documentary and a really well shot and edited piece of journalism, bravo.

I love how this guy has the mindset of a Grandmaster even though he's working in the world's smallest kitchen! This is what success is all about, he's focusing on himself and improving his skills. He doesn't need a big fancy kitchen for that. I do hope he realizes his dreams though, doing what you love for a passion and food brings everyone together!

It would be $8 USD for those 5 in Korea, it would be $4-$5 per fish at least in America. That 5 would be $20-$25. Most of Asia has better prices on literally everything than any country considered western.

@Connor Lipke - That's a big OOF statement. Surely fish prices I can attest to how ridiculous it is in the States and cheap it is back in Korea. But tropical fruits for instance is a completely different story. Seeing a ₩60,000 pricetag for a single mango back in Busan was a jawdropping experience. Basically it's either really cheap (seafood, Japanese food) or invigoratingly expensive (fruits, exports, quality alcohol) in Korea.

I don't even like fish besides a few exceptions, but how much I enjoyed this whole video is beyond that. He is as skilled as charismatic, and how he cares about every step on his work says it all.

Lived in Korea for more than a year. Great people who taught me a lot. Humble, hard working, friendly. The food: amazingly spicy. Women: some of the most beautiful anywhere in the world.
