I recently discovered Matty's Patty sauce and it is perfect. 2 parts mustard, 1 part ketchup, 1 part mayo, some chopped pickles and onions to taste. SO GOOD

Potato roll recipe below. To all the potato roll lovers out there, what would you like to see Nyesha make in the future? For the Potato Rolls 2 eggs + 1 egg yolk 5 tablespoons (62.5 grams) granulated sugar 2 teaspoons (12 grams) kosher salt ½ cup (30 grams) instant mashed potatoes 2 1⁄2 teaspoons (24 grams) instant dry yeast ½ cup (118 grams) reserved potato water (or ½ cup lukewarm water) ¼ cup (61.3 grams) whole milk 2 cups (272 grams) AP flour For the Burger 2-3 1.5 ounce prime beef patties Cheddar cheese, sliced Ketchup Preparation: Step 1: Preheat oven to 350 degrees. Step 2: In a stand mixer, add instant dry yeast, whole milk and salt. Mix briefly. Step 3: Slowly add in AP flour, sugar, instant mashed potatoes, lukewarm water and eggs. Mix until dough begins to form (should be tacky) Step 4: Once dough has formed, add to a medium glass bowl, cover and let rest until doubled in size (approximately 1-2 hours) Step 5: Once dough has risen, roll out onto a floured surface. Knead for 5-10 minutes. Step 6: Cut off pieces of dough and begin to roll into small dough balls slightly smaller than a tennis ball. Step 7: Place dough balls on a baking sheet, cover and rest for 1 hour or until doubled in size. Step 8: Bake for 15-20 minutes or until dough is slightly browned on top and cooked all the way through. Let rest. Step 9: Add seared beef patties, cheddar cheese, your favorite condiments and enjoy!

When I went to the website for the written recipe, it was different from what you did on this video. However, it was noted that you updated the recipe so I felt confident going along with what I read. It is WAY off in proportions. You only call for 2 cups of flour but you increased the eggs to 2 whole eggs plus 3 egg yolks. Well, something doesn't add up here. The dough was a sticky mess with that much liquid and only 2 cups of flour. I had to keep adding flour a little at a time to get any sort of "dough". I must have used a total of 3-4 cups of flour. They did come out beautiful in the end and tasted marvelous so i will try this recipe again but only use the amount of eggs you used in the video and see if that goes along with the 2 cups of flour better.

Question - when she placed the dough on the baking sheet I noticed it was upside down. Can someone explain why the baking sheet was upside down? Curious.

noticed that as well, I think it's for presentation so the sides don't cover up the buns for the shot

It makes a sheet pan act more like a cookie sheet (which has no rim) so you get better airflow around whatever you're baking.

you should ALWAYS let your bread/bun rest at least 1 hour, it should not be warm.

Nyesha, let me first say that you are an excellent teacher!!! Lady bug. I enjoyed every moment of the vid. I bore extremely easy with instructors that say alot of nothing (filler info & stall talking) and who are pedantic. I wish you were my Prof in culinary school. No chance here in the UK, my family used to look after the MD of shake shack UK’s dog, and he hooked me up with a load of their buns, but he has since moved on and my homemade burgers haven’t been the same since

I have never made potato rolls. I figured that it would have a mix of cooked potatoes riced and a flour mix. Similar in principal to gnocchi. The potatoes would be a source of both moisture and starch. Use a higher gluten flour to make up for what the potatoes don't have. Procedurally the same after that. Just what makes sense to me. I didn't do everything in the pastry world.

Recipe doesn’t agree with the video. She added butter to her dough and mentioned that it was like a brioche. There is no butter listed in the ingredient list.

The closest the potatoes got to these rolls was a bowl of instant potato flakes moved past the mix where a couple a flakes were pinched and dropped in.... ARE YOU F'CKING KIDDING ME????? And the Title was Potato rolls not burgers!!!!!!!!!!! Click BAIT!

I will never understand ketchup on burgers. Fries ok. Burger? absolutely not. Ketchup is such a dominant flavor that it covers up everything else.

Smashburger poorly smashed with a tiny icing spatula. Same stupid tiny spatula used to precariously assemble the burgers. Burgers weren't flipped before adding cheese - it was placed on raw beef. Unchewable stalks of herbs sticking out of the burger. Who is this amateur?

She used the tools she had - tools don't make anybody an amateur. Cheese was placed on raw meat but you can see the meat was cooked by the end.

@@theldun1 this is poorly edited (and produced) for an Eater content. She doesn't mention the butter is creamed as well. And, butter is not even written in their ingredient list. Hopefully, there are many other videos for potato rolls on the internet.
