Ingredients:
1 whole chicken, washed and cut into desired-size pieces
Salt, to taste
White pepper, to taste
1 tsp chicken bouillon powder
The desired amount of sugar
Drizzle of oyster sauce
Drizzle of sesame oil
Drizzle of olive oil
Drizzle of Chinese rice wine
1 egg
3 tbsp cornstarch
Green, yellow, and red bell peppers, chopped
1 onion, chopped
All-purpose flour
1 tbsp cornstarch (for flour mixture)
Oil, for frying
For the Sweet and Sour Sauce:
1 cup water
1/2 cup white vinegar
1/2 cup tomato sauce
1/2 tsp salt
1/2 cup sugar
Cornstarch water (1 tbsp cornstarch mixed with water), for thickening the sauce
Red chilies (optional, for spiciness)
Instructions:
In a bowl, marinate the chicken pieces with salt, white pepper, chicken bouillon powder, sugar, oyster sauce, sesame oil, olive oil, Chinese rice wine, egg, and cornstarch. Mix well using gloves and let it marinate for 30 minutes to 1 hour.
Prepare the sweet and sour sauce by combining water, white vinegar, tomato sauce, salt, and sugar in a pan. Stir to combine and bring to a simmer. Add cornstarch water gradually to thicken the sauce. Set aside.
Heat oil in a deep fryer or large skillet to 180°C (350°F).
Prepare a bowl of all-purpose flour and whisk in 1 tbsp of cornstarch.
Coat the marinated chicken pieces in the flour mixture, shaking off any excess.
Fry the chicken pieces in batches until golden brown and crispy. Remove and drain on paper towels.
Heat oil in a wok or large pan over medium-high heat. Add chopped bell peppers, onion, and red chilies (if using). Stir-fry until vegetables are slightly tender.
Add the fried chicken pieces to the wok and toss with the vegetables.
Pour the sweet and sour sauce over the chicken and vegetables. Stir-fry until the sauce coats the chicken and vegetables evenly and becomes slightly thickened.
Serve the sweet and sour chicken hot with steamed rice or noodles. Enjoy your delicious homemade sweet and sour chicken with bell peppers!

There's no other preservatives except what's in the tomato sauce.

Looks good but as a chef who worked in multiple Chinese restaurants, you should turn off the stove, add the sauce, toss it till its fully covered then plate/serve to preserve the crispiness. Usually you cook the sauce in the pan, once it gets to the flavour you want, turn it off and put in the corn starch slurry, take your fried chicken, toss, serve.
