Deliciously sweet caramel has been enjoyed for over 1,000 years, making it one of the oldest sweet treats still being enjoyed today. Originally, caramel was made using only 2 ingredients: sugar & water. The variety of sugar was important for achieving different flavors, with red sugar and molasses sugar being popular in the use of caramel making by the Arabs since their invention of the sweet dish sometime around the year 1,000. Caramel remained that simple from it's invention in the 11th century until the mid 1800s when dairy was first added to the crystalized sugar in order to make the, "soft caramels" that we still enjoy today. Sea salt caramels became popular in the 2nd half of the 20th century 1970-today.

Hard caramel is a very easy dessert to make, with the biggest obstacle being how to cook it over a fire without a candy thermometer & not burning it. If you feel comfortable trying this at home you can make your own caramel with only sugar & water! Below is the recipe: *Pre 1860s Caramel (from The Cook's Dictionary, 1830) 1 cup of white or brown sugar 1/4 cup of water In a sauce pan combine the sugar & water. Set it over medium-high heat and stir until it starts to bubble. Once it bubbles do not stir. Stirring it while boiling will ruin the caramel and make it grainy. While cooking, if you have a candy thermometer be sure that the temperature does not exceed 375 degrees or it may burn. The ideal temperature is 320 degrees. As it boils the color will gradually change into a caramel brown. Once you've reached that beautiful color it's done. Carefully pour into your desired mold or a plate lined with baking paper (lining tins with paper is a practice that goes back centuries). This settles quickly and should be ready to enjoy within 20 minutes. *These would make delicious, homemade lollipops. Quickly pour the molten caramel into molds with lollipop sticks placed over them. *Post 1860s Caramel. This recipe is my own, inspired by a compilation of a dozen or so real recipes that I've seen published between 1860-1900. The main change between this caramel and earlier variations is the addition of dairy. This results in a different end texture which is soft, cuttable and chewy. This will still not be like the ultra-modern caramels that you may be familiar with though. Those usually contain corn syrup. Although corn syrup did exist during the 1800s, it did not become commonly used in cooking until the 20th century so I omitted it for more accuracy. 1/3 cup heavy cream 5 tablespoons of unsalted butter 1 cup of white or brown sugar 1 teaspoon of salt 1/4 cup of water In a sauce pan combine the sugar & water. Set it over medium-high heat and stir until it starts to bubble. Once it bubbles do not stir. Stirring it while boiling will ruin the caramel and make it grainy. While cooking, if you have a candy thermometer be sure that the temperature does not exceed 375 degrees or it may burn. The ideal temperature is 320 degrees. As it boils the color will gradually change into a caramel brown. While that boils in a separate saucepan combine the cream and butter. Melt over medium low heat until the butter is a liquid. Once the sugar has browned nicely carefully pour the melted cream & butter mixture into the cooked sugar. Add salt. Stir up well & then cook for a further 2 minutes on medium heat. Carefully pour into molds or on a pan lined with greased paper. Allow to set in a cold place, such as a refrigerator, for at least 2 hours before slicing & enjoying. Sometimes it can take up to 24 hours to set up. *Be very careful when working with hot caramel as it can cause serious burns if it makes contact with your skin or eyes.

If there is no thermometer, it may be helpful to use the drop method to check what stage it is at, like soft ball or hard crack.

I find it interesting your cat's name is mishmish in Hebrew that means Peach... The way I used to do it without a candy thermometer when I was macrobiotic and making it with rice syrup is when it would come to a boil and if it comes off the spoon slowly you know it's done then turn it off and let it you know don't pick it up too quickly cuz you can burn yourself if you pick it up too quickly and then I would just pour it slowly out into well an ice cube tray. That's almost 30 years ago... Gosh do I feel old.

I got 3 right now. 2 are foster, owner died a few days ago. Waiting for the cops to find his next of kin to take them. If they don't, I'll be looking for new home for them. I also have a dog. They all get along (thank God).

Thank you for solving a mystery for me that went back decades. After WW2 Mom and I lived with my English Grandparents in a small Yorkshire village for several years. My grandmother would make this brown candy of which I never learned its name, until now. It was only after Mom and my grandmother passed away that I remembered that treat. It's the small things that stay with you through your life. I'm now 80 years old and you took me back to my grandmothers' kitchen. Thank You.

Loved this! Thank you. I love Carmel! I make a Thick Carmel Sauce just like your post 1860 recite except I add more cream, butter & vanilla. I mix chopped pecans in with the Carmel . I use it as filling & topping on my Black Devils FOOD scratch cake.

My mom always made her own homemade caramel sauce for ice cream. It was so good! I used to tell all of the younger kids in the family that it was “adult caramel” so they wouldn’t eat it all!

I love the dress too!! My cats have scratching posts, but they prefer clawing out little concaves in our fence-post wood trimming. Everywhere in the house, from shin to thigh height, the fence posts have been stripped to pale wood ^u^

The pre 1860s reminds me of my childhood here in Australia. My mum would make this and pour it into mini muffin trays lined with paper cups, then stick a popsicle stick in them or sprinkle with hundreds and thousands. Here we call it toffee

YUMM! Kids here grew eating scottish toffee which is right in the middle of both . Creamy and sweet like the 1860s but the best was brittle enough that you could smash it into bite size pieces. When i was a kid a box of MacKintosh toffee cost 10 cents and every kid bought one at the Saturday matenae . The sound of 200 boxes being slammed onto the floor was deafening 😂

I watched my Gramma E. Make the Carmel with butter and cream recipe. She said always make small batches at a time in a small enamel saucepan. These are soft carmels.Really good. Wrap in waxed paper and freeze.

When I was little my mom made candy like this, but she poured it on wax paper in small circles about the size of a saucer. Then she put some kind of heavy string and made a loop that hung off the edge. When they dried. We strung ribbon through the loop and hung them on our Christmas tree. Then she would let us take some off the tree and eat them like a safety sucker.

Just a tip when you make caramel get your sugar level in the pan and then add the water. Never stir it, that is what causes the crystallized sugar on the sides of the pan.

I remember going through the same scenario with my cat when I was a kid, lol. She always acted like she didn't know how to get off the roof and it scared me! Three difference between the two caramels is surprising! I've never seen one clear like that. The second reminds me of pralines minus the nuts.
