You almost had it while talking about angle of attack. It's especially obvious with sails, because it's the wind pushing the sail out, applying forward force to the mast and vessel. A key thing to know about airplanes is that even when they fly at a constant altitude, the nose is pitched up. This exposes the underside of the wing to the wind, and the corresponding forces.
