There have been so many times that I shy away from being plant based because I don’t want to be associated with people who are “out there”. I made the soup and it is delicious! The coconut milk removes most of the heat from the pho broth. I’m headed back to the Dollar Tree to get more of the broth and the salt free seasoning.
I just tried the peach cobbler. It's alright. I do like that it is packed with fiber and protein. I'm not vegan yet, but I'm exploring recipes. It is my goal to one day be fully vegan, but I know it's going to take some time.
This is a wonderful video on how to eat on a budget!!! Love all your videos!! I tried 2 of the breakfast dishes and for us, they were a total flop in how they came out and my 4 kids didn't like them. I made the brownies exactly the way you made them and mine came out super thin. I am assuming you are not using a 9X13 pan to bake them. Either way, my kids said the texture was bad and they taste weird. I used a smaller pan for the cake, but I should have used a 9X13 for that one as it would not cook all the way through. The bottom middle was raw no matter how long I left it in. Anyway, the sides were cooked and my kids all tried it but said it tasted weird. I will keep trying your recipes in hopes that one day I can get one of my kids to eat one :) When you transitioned, were your kids all eating veggies or were they just young enough that they were willing to eat more variety? You are so lucky your kids will eat plant-based foods. My only saving grace in this was I didn't spend tons of money on the wasted food. Thanks for all you do!!
Honestly, this wouldn’t even be that expensive at a regular grocery store or at a Whole Foods. The main calorie sources are beans, the calories come from rice, sugar and peanut butter, and frozen veggies add vitamins and nutrients. I bet even at a Whole Foods, a similar set of recipes ends up at like $2/meal

You are next-level vegan 😂💗 You should totes try an authentic asian style rice cooker--will change ur life since you cook a lot of rice like i do(u gotta try a vegan cake in it too--crazy good!) Adding extra onion to any soup is healthy and really onions are cheap. What's the sodium in canned and boxed food.. A tip that takes any peanut butter jelly sandwich to the next level is toasting it as if you were making a grilled cheese, delish!
If you toast a peanut butter and jelly as if it was a grilled cheese, with butter is best but if you don't have any butter it's still good. And the sodium content in most canned foods higher than we should have so rinse the canned beans if you use
