The California roll is one of the most popular Japanese American dishes we know and love today. While the history and origin of the roll are controversial, it is most commonly credited to sushi chef Hidekazu Tojo. We visit his restaurant, Tojo's, in Vancouver, British Columbia, to hear his story and try out his version of the dish, called the Tojo roll.
