While researching for my cookbook, tentatively titled "Real Thai Cooking", I interview friends Francisco and Kevin, who know a thing or two about Portugal, on the Portuguese influence on Thai cuisine.
How wonderful a couple they are! Many Thai desserts are much influenced by Portuguese cuisine but having adapted by using the local raw materials (by the time it was first introduced to Siam). Instead of using fresh milk, baking powder, and butter, coconut milk was chosen as the alternative mixture. I hope I could try the original Portugal desserts in Thailand (but not in the Portuguese restaurant). I would prefer the Portuguese food festival in the shopping center.
