You wouldn't really be able to track the number of downloads with this method unless you use something like Google Analytics Goals and maybe redirect them to a separate page after they download the file. You should be able to see the number of visits to that page and use that to measure the number of downloads. As for opens, your email marketing service should tell you how many people opened your email and how many people clicked on it.

Thank you for this -- I'm trying to upload a pdf to a SquareSpace website but the pdfs are not opening. Any other file type opens. Is this because we haven't published the site yet? My client does not want to publish it until the button linking to that pdf works. Help!
