Banana Bread sealed in a Canning Jar
Ingredients
3/4 cup shortening
2 3/4 cups white sugar
4 Large eggs
2 1/2 cups ripe bananas (about 7-8)
3/4 cup water
3 1/2 cups all-purpose flour
1 teaspoon baking powder
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon (I round up.)
1 teaspoon ground cloves (I round up.)
3/4-1 cup chopped pecans
optional: 1 teaspoon Vanilla Extract & 1 teaspoon Almond Extract (If added, reduce water by 2 teaspoons)
Directions
Preheat oven to 350 degrees F (177 degrees C). Grease insides of 8 (1 pint) straight sided, wide mouth canning jars. In a large bowl, cream butter or shortening and sugar until light and fluffy. Beat in eggs one at a time, bananas, and water. In a separate bowl, stir or sift together flour, baking powder, soda, salt, cinnamon, and cloves. Add to banana mixture. Stir in nuts.
Pour mixture into greased jars, filling 1/2 full of batter. Do not put lids on jars for baking. Wipe off rims of jars with a clean wet cloth. Place jars an inch or more apart on a baking sheet. (Place a shallow pan with a cup of water in it in the bottom of oven to evaporate during the baking.)
Bake at 350 degrees F (177 degrees C) for 35-45 minutes. Meanwhile, sterilize the lids and rings in boiling water.
As soon as bread is done, remove from oven one at a time, wipe rims of jars and put on lid and ring. Jars will seal as they cool. Wait until they are fully sealed and completely cool before removing ring and placing a "shepherds cap"-type cloth on for optional decoration. Label jars with the contents, date, and instructions like: "Keep refrigerated. Expires 4 months from date."
The FDA does NOT recommend "canning" bread because quick breads contain a high amount of moisture and low acidity levels which can cause the growth of a bacteria called Clostridium botulinum, which is commonly known as botulism.
NO known cases of botulism have been connected to home canned breads. It is recommended that you keep your canned bread in the refrigerator.

If you want to lengthen shelf life, leave out the pecans. Oils within the nuts will eventually turn rancid and spoil the loaf. Great recipe!

Amd use extra bananas and omit the eggs to lengthen the shelf life. I agree re: nuts
@wardrobelion
@wardrobelion 2 года назад
Coconut oil doesn’t go rancid but bananas have a lot of moisture in them which causes molding. If dehydrated bands were powdered for flavor and vacuum sealed it should be shelf stable. The eggs were cooked so they should be fine…my opinion only.

sarah - I'm the grandmother here. My granddaughter has inherited all my love for sewing, crocheting, knitting, weaving and baking (and reading, writing and playing the violin - but she's smarter than me). As she is the only granddaughter I have, I am leaving her with everything including my 1860 coal / wood stove.. There's nothing more wonderful or warm than getting back to the independent basics. As far as your grandmother's recipes, you might consider putting them in a book for posterity. It's what I did for my girls - but they get their recipes online. Someday, I tell them, the internet might not be available. Hard copies are best.::))

Something that someone else might find useful- I let the bananas thaw completely, cut the very end off, then squeeze it into the bowl! Works great and usually no messy hands! 😉 Thanks for the recipe, I’m making this tomorrow!

I like to peel my bananas before freezing. Saves a step and waaayy less messy than freezing with the skins. And they aren’t all brown and slimy that way. Peel, place individually on parchment paper on a cookie sheet and freeze, then bag up for freezer storage. We use them every day for green smoothies so I even buy them with spots. My two cents. Have a blessed day!

I wonder if I could use my mom's recipe and do this. She went Home to Heaven a few years ago and our family treasures her recipe. The ingredients are: 2 1/2 cup all-purpose flour 1 2/3 cup sugar 1 1/4 tsp baking powder 1 tsp baking soda 1 1/4 cups ripe mashed bananas 2/3 cup buttermilk 2/3 cup butter 2 eggs 2/3 cup chopped nuts Could you advise me on this? It would just make it more special if I could do this with Mama's recipe and give it as gifts, especially to family and people who knew her. When I make this Banana Bread my family says they just know there's something "special" in it that I or Mama never told. hahaha There's not; it's just that good. I don't mind anyone copying this recipe. :-)

I'm hyped! I have to share this. I just found some canned banana bread from Oct 2016! It was still sealed so I popped it open prepared for whatever. It smelled like banana bread. I sliced off a tiny piece and tasted it and IT TASTED LIKE BANANA BREAD and it was nice and moist. 2016! I should mention that when I made it I added "Fruit Fresh" to the batter which has citric and ascorbic acid in it which is a preservative. That probably made the difference. When I made this bread I experimented with different breads: pumpkin, banana, cornbread and another I forget what it was. I kept my eye on them and over time they popped up and I had to trash them. Here it is Sept 2021 and the only ones that survived long term was this banana and an Orange Pumpkin bread. I'll be trying the pumpkin bread soon. I'm thinking citric is key. Looks like I'll be looking for cheap over ripe bananas to make more canned banana bread😃😃

Hi Gerry! I'm so grateful you know about Ceylon Cinnamon. For those who are allergic to the standard Cinnamon sold in the U.S., it's because of many (simple) reasons. When we learned about this from my cousin who was going to culinary school, at the time, we invested in a beautiful Organic Ceylon as a test, and it has been amazing to have (the best tasting!!) it back in our recipes! What a treat and blessing! Thank you for mentioning this lovely Cinnamon! Hopefully, more people try it and abandon what we've grown up with. 🥰💕

@@mssavedin92 I have thought about the sugar beet crops, we feed beet pulp which is beets after the sugar has been extracted to livestock stock. We feed it to horses and it is very effective because of the sugar being gone and the fiber is digested in the hindgut like hay. However I have wondered about the GMO. Cattle are being fed this as well.

At our place I made a dozen, and by the second day they've already eaten more than half, so we'll have no probs with spoilage 😂 they are very moist, even though they're well cooked. Can you add citric acid to increase shelf life and decrease chances of botulism?

Your mixer was the exact same one my Aunt Betty used. It was so bittersweet watching you use it, and your Spirit is exactly like hers.♥️

Christa this is off topic but do you do the voice-over for In Touch daily spiritual messages. It sure does sound like you. Just curious.

Fantastic recipe for Christmas. Banana bread and Cranberry orange bread are my all time favorite holiday recipes. Merry Christmas to you and your family. You are a tremendous precious blessing.

This was an excellent video! I’m already for Christmas 2021 with a new idea. Do you also recommend other types of breads to be cooked like this?

Yum, banana bread is awesome! Never had it baked in a jar. I have a question: in your opening shot how have you illuminated the two lanterns over your right shoulder? Merry Christmas! 🎄🎄🎄

To avoid small pieces of egg shell in batter I always crack in a small bowl first. Nothing worse except maybe hair in food.

Could you replace the water with fruit juice?
@PREPSTEADERS
@PREPSTEADERS 2 года назад
I have not tried that before, George, so if you experiment, please let us know how it goes! The only thing I can think of is that it would likely work, but you might reduce the sugar just a bit to compensate for the added sweet of the juice. Let us know if you try it!

Have you ever baked it, canned it and then store in freezer for a few months before giving them as a gift? Would that be a good idea? Thank you.
@trishcraig723
@trishcraig723 3 года назад
My guess is it would be okay, if it will last months in the fridge. Having said that I don't know if freezing temps could cause the lids to cotract and break the seal. If you won't be gifting it relatively soon, maybe put off making it until you are ready. No storage issues!🙂
